Hearty Chicken Breast & Pork Vegetable Curry
A Delicious Curry Recipe with Chicken and Pork
I love vegetable curry, but my husband prefers meat, so I’ve added chicken breast and pork. A touch of apple adds a delightful sweetness! This recipe combines tender chicken, flavorful pork, and fresh vegetables for a satisfying meal.
Main Ingredients- 1 piece Chicken breast (approx. 150-200g)
- 100g Pork (ground or thinly sliced)
- 1 medium Potato
- 1/2 medium Carrot
- 1 medium Onion
- 1/2 Apple (optional, for added sweetness and depth)
Seasoning & Others- 1 packet Curry powder (use according to package directions)
- Pinch of black pepper
- Pinch of salt (or seasoned salt)

Cooking Instructions
Step 1
First, peel and dice the onion into bite-sized pieces (about 1.5cm cubes). Heat a pan over medium-low heat with a little oil. Add the diced onion and sauté until translucent. Adding a tiny pinch of salt at this stage will help bring out the onion’s natural sweetness.
Step 2
Next, peel and dice the potato and carrot into similar bite-sized pieces (about 1.5cm cubes). Add the diced potato and carrot to the pan with the onions, add a little more oil, and sauté over medium heat until the vegetables are slightly tender. Season lightly with salt.
Step 3
Pat the pork dry with paper towels and cut it into bite-sized pieces. Heat a dry pan over medium heat (no oil needed initially). Add the pork and cook until the surface turns opaque. Season with a pinch of salt and pepper as it cooks.
Step 4
We’ll also cook the chicken breast without oil. Cut the chicken breast into bite-sized pieces. Add them to the heated pan and cook until the exterior turns white. Season with a pinch of salt and pepper.
Step 5
Combine the sautéed vegetables (onion, potato, carrot) with the cooked pork and chicken breast in the pan. Stir everything together and sauté briefly to meld the flavors. Then, add half a cup of water (about 100ml) and bring to a boil over high heat. Sautéing the ingredients beforehand significantly enhances the overall flavor.
Step 6
While the mixture is coming to a boil, dissolve the curry powder in one cup of cold or lukewarm water (about 200ml). Make sure there are no lumps. Dissolving the curry powder in water beforehand prevents it from clumping in the curry and ensures a smooth consistency.
Step 7
Once the contents of the pot are boiling vigorously, pour in the dissolved curry mixture. Rinse out any remaining curry from the bowl or measuring cup with a little water and add it to the pot. Reduce the heat to medium. If using, add the half apple (grated or thinly sliced) for natural sweetness. Continue to cook, stirring occasionally, until the curry thickens to your desired consistency and the flavors have melded beautifully. Your delicious curry is ready to be served with rice!
