Nourishing Brown Rice Rice Cake Soup with Chicken Feet Broth: Boost Immunity with this Superfood Tteokguk!
This is a nourishing rice cake soup made with a rich and deep chicken feet broth and chewy brown rice cakes. It’s excellent for restoring energy in elders, and also great for nutritional replenishment for patients or those who are frail. It’s a special tteokguk that can be enjoyed without worry even by those who cannot eat red meat or bone broth. (Uses store-bought frozen chicken feet broth) Experience a healthy bowl that helps with energy recovery and immune system enhancement.
Soup Ingredients- 200ml thawed chicken feet broth (broth made by simmering chicken feet, water, ginger, onion, and garlic)
- 90g brown rice tteokguk rice cakes
- 2 Tbsp minced green onion
- Pinch of salt
- Pinch of pepper
Garnishes- 1 egg (for egg garnish)
- 1/2 sheet roasted seaweed (gim)
- 50g cooked chicken breast (shredded or sliced for easy eating)

Cooking Instructions
Step 1
1. Thaw 1 pack (200ml) of frozen chicken feet broth at room temperature. While it thaws, you can skim off any solidified fat from the surface for a cleaner broth flavor.
Step 2
2. In a pot, combine the thawed chicken feet broth and minced green onion, then bring to a boil. Do not add extra water, or only a very small amount if necessary.
Step 3
3. To remove any unique aroma from the chicken feet broth, let it simmer with the green onions for a short while. (The aroma at this stage is usually not strong.)
Step 4
4. Add a handful of thinly sliced brown rice tteokguk rice cakes and simmer for about 1 to 2 minutes more. Brown rice cakes tend to soften quickly compared to regular rice cakes, so be careful not to overcook them until they become mushy. Season with a pinch of salt at this point.
Step 5
5. Ladle the finished tteokguk into bowls. Arrange the prepared garnishes – roasted seaweed, thinly sliced egg omelet, and cooked chicken breast – attractively on top. Finish with a sprinkle of pepper.

6. It’s best to serve and enjoy the tteokguk immediately while it’s piping hot! Enjoying it warm allows you to fully appreciate the rich flavor of the chicken feet broth and experience it without any off-putting aromas.

7. Serve the tteokguk with well-fermented kimchi for an even more satisfying meal. This tteokguk is rich in nutrients and has a very deep broth, offering a distinctly different and profound taste compared to typical tteokguk made with anchovy broth.
