Main Ingredients

  • 1.5 medium potatoes
  • 2 strips thick-cut bacon
  • 3 fresh eggs
  • 3 Tbsp milk (for tenderness)
  • 2 mini King Oyster mushrooms
  • 2 pieces onion (diced)
  • 1 handful mozzarella cheese
  • 2 slices processed cheese

Seasoning & Spices

  • Pinch of salt (to taste)
  • Pinch of black pepper (to taste)
  • Pinch of dried basil (to taste)

Cooking Instructions

Step 1

First, wash and peel the potatoes, which are a key ingredient for the omelette. Slice them thinly into approximately 0.3cm thick pieces. Thin slices cook faster.

Step 1

Step 2

In a pot, add enough water to cover the sliced potatoes and bring to a boil over high heat. Once boiling, add the potatoes and cook until they are tender enough to be easily pierced with a fork (about 10-15 minutes). Drain the cooked potatoes thoroughly in a colander.

Step 2

Step 3

While the potatoes are cooking, cut the bacon into bite-sized pieces (about 2cm intervals) and cook them in a pan over medium-low heat, turning occasionally, until golden brown and crispy. You can gently pat the rendered bacon fat with a paper towel for a cleaner result.

Step 3

Step 4

Once the potatoes have cooled slightly, place them in a bowl and mash them smoothly with a fork or a potato masher until no lumps remain. Smoothly mashed potatoes create a better omelette texture. (The original step ‘8 minutes later, I poked the potatoes and they were fully cooked, so I drained the water and set them aside’ has been integrated into Step 1 for clarity.)

Step 4

Step 5

In a separate bowl, crack 3 fresh eggs and add 3 tablespoons of milk. Whisk the eggs and milk thoroughly with a fork until well combined. Meanwhile, finely dice or thinly slice the onion and trim the ends of the mini King Oyster mushrooms before slicing them into bite-sized pieces.

Step 5

Step 6

Preheat a non-stick skillet over medium-low heat and add a generous amount of cooking oil. Once the pan is properly heated, pour the whisked egg mixture evenly into the pan, coating the bottom thinly. Tilt the pan to ensure the egg mixture spreads evenly.

Step 6

Step 7

As the egg mixture begins to set, evenly spread the mashed potatoes over one half of the pan. Arrange the sliced onions and mushrooms attractively on top of the potatoes. It’s good to make the potato-covered side slightly larger.

Step 7

Step 8

Lightly season the potatoes and vegetables with salt, black pepper, and dried basil. Adjust the amount of spices to your preference. Basil adds a wonderful aroma.

Step 8

Step 9

Sprinkle the chopped, cooked bacon evenly over the side with potatoes and vegetables. The savory bacon flavor complements the omelette beautifully.

Step 9

Step 10

Next, sprinkle the mozzarella cheese over the filling and then tear the 2 slices of processed cheese and place them on top. The melting cheese will help bind the ingredients together.

Step 10

Step 11

Once the cheese begins to melt, carefully lift the unfilled half of the omelette. Gently fold it over the filling to cover it. If the omelette is too full to fold easily, you can tilt the pan to help it naturally fold over.

Step 11

Step 12

If the omelette is very full and difficult to fold neatly, place a serving plate next to the pan. Then, carefully tilt the pan to flip the omelette onto the plate. This method helps maintain its shape.

Step 12

Step 13

This Bacon Potato Omelette is delicious on its own! For an extra touch, serve it with honey mustard sauce for a creamy flavor or ketchup for a tangy contrast. Your kids will absolutely love it!

Step 13

Step 14

(The original step ‘It tastes good as is, but you can add honey mustard or ketchup to your liking’ has been integrated into Step 12 for a more natural flow.)
