My partner loves glass noodles, so I made this braised chicken generously filled with them. It’s so delicious and filling that no other side dishes are needed! I especially enjoy picking out the potatoes and carrots. This dish is perfect for a hearty, satisfying meal.

Ingredients

  • 1.5kg chicken, cut into pieces
  • 2 Tbsp rice wine (for removing chicken odor)
  • 1 potato, cut into large chunks
  • 1 piece carrot, cut into large chunks
  • 1 stalk green onion, cut into large pieces
  • 1 Korean green chili pepper, cut into large pieces (or regular green chili peppers)
  • 200g wide glass noodles

Braising Sauce

  • 1/2 cup soy sauce
  • 2 Tbsp rice wine
  • 2 Tbsp corn syrup or oligosaccharide (adjust sweetness)
  • 1/3 Tbsp minced ginger (or ginger juice)
  • 3 Tbsp minced garlic
  • 1 cup water

Finishing Touches

  • 2 Tbsp sesame oil
  • 3 Tbsp toasted sesame seeds

Cooking Instructions

Start by preparing the chicken to remove any gamey odor. Bring a pot of water to a boil, add 2 Tbsp of rice wine, and then add the chicken pieces. Blanch for about 2 minutes. This step helps to remove excess fat and impurities, resulting in a cleaner flavor.

After blanching, rinse the chicken under cold running water to wash it thoroughly. Place the washed chicken back into a pot or a deep pan suitable for braising. Add just enough water to barely cover the chicken pieces (avoid adding too much water at this stage).

Now, let’s make the flavorful braising sauce! In a separate bowl, combine the soy sauce, rice wine, corn syrup (or oligosaccharide), minced ginger, minced garlic, and 1 cup of water. Whisk everything together until well combined. Pour this prepared sauce evenly over the chicken in the pot.

Next, prepare the vegetables that will add substance and texture to the dish. Peel the potato and carrot, then cut them into large, bite-sized chunks, similar in size to the chicken pieces or slightly larger. When adding the glass noodles, here’s a helpful tip: Pre-boiling or soaking the noodles in cold water can cause them to absorb a lot of liquid. If the noodles are undercooked or appear very soft, you might need to add about 1 cup of water to prevent the braising liquid from becoming too concentrated. I slightly pre-boiled my noodles, so I added 1 cup of water to ensure there was enough liquid. Stir well to distribute the noodles and allow them to absorb the sauce.

Finally, let’s add the ingredients that will enhance the aroma and flavor. Add the chopped green onion and the Korean green chili pepper (or regular green chili peppers). Turn off the heat, cover the pot for a few minutes to allow the flavors of the green onion and peppers to infuse. If you enjoy a spicier kick, feel free to add some more chili peppers! Drizzle in 2 Tbsp of sesame oil and give everything a final mix. Your delicious braised chicken is almost ready!
