To preserve tomatoes for longer, I made canned tomatoes! By adding these canned tomatoes instead of broth to soft tofu stew, you can create a tomato soft tofu stew that resembles a rich stew. This recipe offers a unique and comforting meal.

Stew Ingredients

  • Canned Tomatoes (or Tomato Sauce) 500ml
  • Ground Beef 300g
  • Soft Tofu (Sundubu) 400g
  • 1 Onion
  • 1 bunch King Oyster Mushrooms
  • 1 Green Onion
  • 4 Tbsp Minced Garlic
  • 2/3 tsp Fine Salt
  • Pinch of Black Pepper
  • 3 Tbsp Olive Oil (or Vegetable Oil)
  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Sugar

Optional Ingredients (for Extra Flavor)

  • 2 Eggs
  • 2 Tbsp Sesame Oil

Cooking Instructions

Step 1

First, peel and trim one onion. Finely mince it. Finely mincing the onion helps it break down easily when sautéed, resulting in a smoother stew base.

Trim the tough base off the king oyster mushrooms. Rinse them lightly under running water. Be gentle to avoid damaging the mushroom caps.

Trim the root and outer leaves of one green onion. Finely chop it. You can separate some for garnish later if desired.

Prepare a pot for the stew. Add 3 tablespoons of olive oil (or vegetable oil) to the pot and preheat over medium-high heat. Once the pot is hot, add the chopped green onion and minced garlic.

Reduce the heat to medium and sauté the green onion and garlic. Stir frequently to prevent burning, allowing their fragrant aromas to infuse the oil.

As the aroma of the green onion and garlic intensifies, add the minced onion. Increase the heat to high and stir-fry until the onion becomes translucent.

Once the onion is translucent, add the 300g of ground beef.

Gently place the two halves of the soft tofu into the boiling stew. Be careful not to break the tofu at this stage.

Using a knife, cut the tofu directly in the pot into your desired serving sizes (usually 3-4 pieces per half). This method helps the tofu maintain its shape and makes it easy to scoop out. 😊

Once the tofu is added, cover the pot with a lid. Reduce the heat to medium and simmer for 15 minutes, allowing the flavors to meld together beautifully.

After 15 minutes, remove the lid. Give the stew a quick stir and add another three shakes of black pepper for freshness.

Sprinkle the reserved chopped green onion over the top of the stew as a garnish. Turn off the heat immediately after adding the green onion. The residual heat is sufficient.
