This is the very first soup recipe I ever learned to make: Beef and Seaweed Soup. It’s perfect because even if you make a large pot, it tastes even better the longer it simmers, making it a comforting and fuss-free dish. Let’s make this tender and flavorful soup that’s suitable for special occasions or everyday meals!

Main Ingredients

  • 300g beef for soup (e.g., brisket or chuck)
  • 1 handful dried seaweed (approx. 20g)

Seasonings

  • 2 Tbsp soup soy sauce (guk-ganjang)
  • 1 Tbsp tuna extract (or fish sauce)
  • 1 Tbsp minced garlic
  • Salt to taste
  • 2 Tbsp sesame oil

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water for about 20-30 minutes, or until it becomes soft and pliable. It’s important that the seaweed is fully rehydrated. Once rehydrated, rinse the seaweed thoroughly under cold water, drain any excess water, and cut it into bite-sized pieces.

Heat 2 tablespoons of sesame oil in a deep pot over medium-high heat. Once the pot is warm, add the beef for soup and minced garlic. Sauté for about 2-3 minutes, or until the beef loses its pink color and turns a light brown. Ensure the garlic releases its fragrance.

Once the beef is partially cooked, add the drained seaweed to the pot. Continue to stir-fry with the beef and seaweed for another 1-2 minutes. This step helps the seaweed absorb the flavors from the beef and sesame oil, enhancing the overall taste.

After stir-frying the seaweed and beef, pour in enough water to cover the seaweed completely (approximately 1.5 to 2 liters). Bring this to a boil over high heat.

Once the soup comes to a rolling boil, add 2 tablespoons of soup soy sauce and 1 tablespoon of tuna extract. Stir well to combine. Taste the soup and adjust the seasoning with salt as needed to reach your preferred flavor. Once the seasoning is right, cover the pot, reduce the heat to medium-low, and let it simmer for 15-20 minutes. The longer it simmers, the deeper and richer the flavor will become.
