How to Make Delicious Beef Seaweed Soup

I made this Miyeokguk because my children love it! This is a nourishing and deeply flavorful soup that’s loved by both kids and adults. The combination of tender beef and rehydrated seaweed is wonderful, and the addition of anchovy sauce adds a savory depth that makes the broth richer and more satisfying. It’s a perfect dish for home parties or special occasions, promising a hearty and fulfilling meal.

Main Ingredients
  • Beef (for soup) 500g
  • Dried Seaweed 50g

Seasoning & Broth
  • Soup Soy Sauce 3 Tbsp
  • Minced Garlic 1 Tbsp
  • Anchovy Sauce 2 Tbsp
  • Sesame Oil 1 Tbsp
  • Water 2 Liters

Cooking Instructions

Step 1

Soak the dried seaweed in cold water for about 10-15 minutes until fully rehydrated. Rinse the soaked seaweed thoroughly, squeeze out excess water, and cut it into bite-sized pieces (about 3-4cm long).

Step 2

Heat 1 tablespoon of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until the surface is browned. Avoid overcooking to prevent the beef from losing its juices.

Step 3

Once the beef is browned, add the rehydrated seaweed to the pot and stir-fry together. Adding a little more sesame oil will enhance the seaweed’s aroma. Sauté for about 2-3 minutes until the seaweed softens.

Step 4

When the beef and seaweed are well stir-fried, add 3 tablespoons of soup soy sauce and continue to stir-fry for another 2 minutes. Stir-frying helps the soup soy sauce to penetrate the ingredients, deepening the color and enhancing the savory flavor.

Step 5

Pour in 2 liters of water and bring to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer for about 10-15 minutes to ensure the seaweed and beef are tender and fully cooked.

Step 6

Finally, add 1 tablespoon of minced garlic and 2 tablespoons of anchovy sauce. Simmer for a few more minutes to adjust the seasoning. The anchovy sauce will make the broth much richer and more refreshing. You can add salt to taste if needed. Continue to cook for another 3-5 minutes until done.
