Main Ingredients- 400g Tteokguk tteok (rice cakes for soup)
- 100g Ground beef
- 1 stalk Green onion
- 2 Eggs
- Pinch of salt
- 5 cups Anchovy-kelp broth (approx. 1L)

- 1 Tbsp Sesame oil
- 1/3 Tbsp Minced garlic

Cooking Instructions
Step 1
Soak the tteokguk tteok (rice cakes) in cold water for about 10 minutes to soften them. They can be quite hard when dry. Drain the softened rice cakes in a colander to remove excess water. This helps prevent them from sticking together in the soup.
Step 2
In a small bowl, combine the seasoning ingredients for the beef: 1 tablespoon soy sauce, 1 tablespoon sesame oil, 1/3 tablespoon minced garlic, a pinch of salt, and a pinch of black pepper. Mix them well. Add the 100g of ground beef to the seasoning mixture and gently knead it in with your hands. Let it marinate for 10 minutes. Marinating the beef beforehand enhances its flavor significantly.
Step 3
Wash the green onion stalk thoroughly. Slice it diagonally into thin pieces, keeping both the white and green parts. This will add a refreshing aroma and flavor to your tteokguk.

Heat a pan over medium heat. Add the marinated ground beef to the pan and stir-fry it, breaking it apart with your spatula to prevent clumps. Cook the beef quickly until it’s nicely browned. This step ensures the beef is tender and flavorful for the garnish.

Now, let’s prepare the soup base. Pour the 5 cups of anchovy-kelp broth into a pot and bring it to a rolling boil over high heat. Once the broth is boiling vigorously, add the drained tteokguk tteok. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot as they cook.

When the rice cakes become soft and start floating to the surface of the soup, it’s time to add the egg. Gently pour the 2 beaten eggs in a thin stream around the edges of the pot. As the egg begins to set, add the sliced green onions and let the soup simmer for another moment. Avoid over-stirring the eggs to maintain delicate ribbons.

Ladle the hot tteokguk into individual serving bowls. Arrange the cooked beef garnish attractively on top. Your delicious So-gogi Tteokguk is now ready to be enjoyed! Serve immediately for the best taste and warmth.
