  • Beef (ground or bulgogi cut) – appropriate amount
  • Well-fermented napa cabbage kimchi – appropriate amount
  • 1 medium potato
  • 1/4 stalk of green onion

Seasonings and Other Ingredients

  • Pinch of black pepper
  • 1 Tbsp tuna extract (or soy sauce)
  • 2 Tbsp kimchi juice
  • Canola oil or cooking oil – appropriate amount
  • Pinch of salt for stir-frying (or regular salt)
  • 1 Tbsp cooking wine (optional, to remove beef odor)

Cooking Instructions

First, prepare the ingredients. Cut the beef into bite-sized pieces or use ground beef. Peel the potato and slice it thinly, about 0.5cm thick. Remove excess filling from the well-fermented kimchi and chop it into approximately 1cm pieces. Finely chop the green onion.

Heat a pan over medium-low heat, add a generous amount of canola oil, and stir-fry the chopped green onions until fragrant and lightly browned. This step really enhances the flavor.

Once the green onion oil is fragrant, add the sliced potatoes. Sprinkle a pinch of salt for stir-frying. Sauté for about 3-4 minutes until the potatoes are about half cooked and translucent. Pre-cooking the potatoes ensures they become tender by the time the fried rice is done.

Now, add the prepared beef. To eliminate any gamey smell from the beef, add 1 tablespoon of cooking wine and a dash of black pepper.
