Hearty Beef and Potato Kimchi Fried Rice

Quick and satisfying for busy days! This is a simple yet hearty one-dish meal, kimchi fried rice, that the whole family can enjoy. It’s a delicious recipe that you can confidently serve to children.
Main Ingredients- Beef (ground or bulgogi cut) – appropriate amount
- Well-fermented napa cabbage kimchi – appropriate amount
- 1 medium potato
- 1/4 stalk of green onion
Seasonings and Other Ingredients- Pinch of black pepper
- 1 Tbsp tuna extract (or soy sauce)
- 2 Tbsp kimchi juice
- Canola oil or cooking oil – appropriate amount
- Pinch of salt for stir-frying (or regular salt)

Cooking Instructions
Step 1
First, prepare the ingredients. Cut the beef into bite-sized pieces or use ground beef. Peel the potato and slice it thinly, about 0.5cm thick. Remove excess filling from the well-fermented kimchi and chop it into approximately 1cm pieces. Finely chop the green onion.
Step 2
Heat a pan over medium-low heat, add a generous amount of canola oil, and stir-fry the chopped green onions until fragrant and lightly browned. This step really enhances the flavor.
Step 3
Once the green onion oil is fragrant, add the sliced potatoes. Sprinkle a pinch of salt for stir-frying. Sauté for about 3-4 minutes until the potatoes are about half cooked and translucent. Pre-cooking the potatoes ensures they become tender by the time the fried rice is done.
Step 4
Now, add the prepared beef. To eliminate any gamey smell from the beef, add 1 tablespoon of cooking wine and a dash of black pepper.
Step 5
Increase the heat to medium and stir-fry until the beef is completely cooked through and no longer pink. Ensure all ingredients are well combined.
Step 6
Once the beef is fully cooked, add the chopped kimchi and 2 tablespoons of kimchi juice. Stir-fry together for about 2-3 more minutes until the kimchi softens and absorbs the flavors. The tangy kimchi flavor will stimulate your appetite.
Step 7
Add 2 servings of rice (preferably day-old rice) and 1 tablespoon of tuna extract. The tuna extract adds umami and helps season the dish perfectly, so it’s highly recommended. Break up the rice with a spatula and stir-fry until all the ingredients are evenly mixed and the rice is fluffy.
Step 8
When the rice grains are separate and well-coated with the ingredients and seasoning, your delicious kimchi fried rice is ready! Serve it attractively in warm bowls.
