Rice Ball Ingredients
  • 2 bowls of warm cooked rice
  • Pinch of salt
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds
  • 6-8 fresh perilla leaves

Beef Stir-fry Ingredients
  • 100g ground beef
  • 1/4 carrot, finely minced
  • 1/4 onion, finely minced
  • 1/4 broccoli stem, tough outer layer peeled and finely minced
  • 1/2 tsp minced garlic
  • 1 Tbsp soy sauce
  • 1/2 Tbsp corn syrup or rice syrup
  • 1/2 Tbsp cooking wine (mirin or similar)

Cooking Instructions

Step 1

In a bowl, combine 2 bowls of warm cooked rice with a pinch of salt, 1 Tbsp of sesame oil, and 1 Tbsp of toasted sesame seeds. Gently mix with a spatula, ensuring not to mash the rice grains. This seasoning forms the base for your rice balls.

Step 2

In another bowl, place 100g of ground beef. Add the finely minced carrot, onion, and broccoli stem. Mix in 1/2 tsp of minced garlic, 1 Tbsp of soy sauce, 1/2 Tbsp of corn syrup (or rice syrup), and 1/2 Tbsp of cooking wine. Combine well to marinate the beef, similar to a bulgogi marinade.

Step 3

Heat a frying pan over medium-low heat. Add the marinated beef and vegetable mixture. Stir-fry until the vegetables are tender and the beef is cooked through and no longer pink, and any excess moisture has evaporated. Be careful not to burn the seasoning. Set the cooked beef aside to cool.

Step 4

Rinse the perilla leaves thoroughly. Briefly blanch them in hot boiling water for about 5 seconds, then immediately remove and rinse under cold water. This process makes the leaves pliable for wrapping while preserving their aroma. Pat them dry and lay them flat on a piece of plastic wrap or a rolling mat.

Step 5

On the plastic wrap, arrange the perilla leaves, slightly overlapping them. Spread a thin layer of the seasoned rice over the perilla leaves. Evenly distribute the cooked beef and vegetable mixture on top of the rice. You can add another thin layer of rice on top if desired, adjusting rice quantity to your preference.

Step 6

Using the plastic wrap, carefully gather the edges to enclose the rice and beef, forming a large, compact rice ball. Squeeze gently to shape it into a firm ball. Once shaped, unwrap and enjoy your delicious, oversized rice ball!
