The combination of generous beef and assorted mushrooms creates a deep, savory flavor that’s ideal for the whole family to gather around and enjoy. It’s a delightful dish that’s also perfect for special occasions or when hosting guests.
Ingredients for a Rich Hot Pot- Beef (for Bulgogi or Shabu-shabu) 300g
- Shiitake mushrooms 3 pcs
- Oyster mushrooms 1/2 pack
- King oyster mushrooms (or similar) 1/2 pack
- Enoki mushrooms 1/2 pack
- Fresh crown daisy (a bunch)
- Glass noodles (for serving)
- Red chili pepper 1/2 pc (for garnish, optional)
Beef Marinating Ingredients- Beef 300g
- Sugar 1 Tbsp
- Cooking wine (Mirin or Sake) 2 Tbsp
- Minced garlic 1 Tbsp
- Fish sauce (anchovy or sand lance) 2 Tbsp
- Onion 1/4 pc (thinly sliced)
- Green onion (white part) 1/2 stalk (cut diagonally)
- Sesame oil 1 Tbsp
- Ground black pepper (a pinch)
Hot Pot Seasoning Sauce- Soy sauce (regular) 5 Tbsp
- Minced garlic 1 Tbsp
- Sugar 1/2 Tbsp
- Sesame oil 1 Tbsp
- Water 300ml (broth or plain water)
- Beef 300g
- Sugar 1 Tbsp
- Cooking wine (Mirin or Sake) 2 Tbsp
- Minced garlic 1 Tbsp
- Fish sauce (anchovy or sand lance) 2 Tbsp

Cooking Instructions
Step 1
First, soak the glass noodles in cold water until softened. Pre-soaking them will reduce cooking time and result in chewier noodles.
Step 2
Prepare the beef, ideally for bulgogi or shabu-shabu. Gently press out any excess blood with paper towels to minimize any gamey flavor and ensure a clean taste. Add 1 Tbsp of sugar to the drained beef and mix well. Sugar helps tenderize the meat.
Step 3
Next, add 1 Tbsp of minced garlic and 2 Tbsp of fish sauce, then gently mix the beef to marinate. Using fish sauce will significantly enhance the umami flavor.
Step 4
Incorporate the thinly sliced onion (1/4 pc) and diagonally cut green onion (white part, 1/2 stalk). Finally, drizzle with 1 Tbsp of sesame oil and mix thoroughly. Let the marinated beef sit for a while to allow the flavors to meld.
Step 5
Now, let’s make the seasoning sauce that will define the hot pot’s flavor. In a bowl, combine 5 Tbsp of soy sauce, 1 Tbsp of minced garlic, 1/2 Tbsp of sugar, 1 Tbsp of sesame oil, and 300ml of water. Stir well until the sugar dissolves. You can also add a pinch of gochugaru (red pepper flakes) to this sauce if you like it spicy.
Step 6
Time to prepare the mushrooms. Trim the tough ends off the oyster, king oyster, and enoki mushrooms, then wash them thoroughly under running water. For the shiitake mushrooms, thinly slice the caps while keeping their shape for an attractive presentation. Lastly, gently wash the crown daisy and pat it dry.
Step 7
Arrange the marinated beef in the center of a wide hot pot. Artfully place the assorted mushrooms and the soaked glass noodles around the beef. Presenting the ingredients beautifully will make the hot pot even more appealing.
Step 8
Pour the prepared seasoning sauce evenly over the ingredients in the hot pot. Bring it to a boil over high heat.
