Assorted Jeon Hot Pot Ingredients

  • 160g Radish (adds a refreshing and clear broth flavor)
  • 3 pieces Pollack Jeon (Fish pancake)
  • 2 pieces Red Pepper Jeon (Stuffed pepper pancake)
  • 3 pieces Perilla Leaf Jeon (Stuffed perilla leaf pancake)
  • 2 pieces Tofu Jeon (Pan-fried tofu)
  • 0.5 Tbsp Minced Garlic (removes gamey smells and adds umami)
  • 1/2 Onion (adds sweetness and depth of flavor)
  • 1 Shiitake Mushroom (adds aromatic scent and chewy texture)
  • 1/3 stalk Green Onion (for color and refreshing taste)
  • 50g Spam (a special ingredient for kids, sliced)

Seasoning and Broth Ingredients

  • 0.5-1 Tbsp Salted Shrimp (adds umami and seasoning; start with 0.5 Tbsp and adjust to taste)
  • 1 Tbsp Soy Sauce for Soup (adds deep flavor)
  • 1 Tbsp Red Pepper Flakes (adds spiciness and color)
  • 500ml Water (basic broth base)
  • 1 Bouillon Cube (or 500ml store-bought broth)

Cooking Instructions

Step 1

First, pour 500ml of water into a pot and bring it to a boil over high heat. Since the broth may reduce while cooking, check it occasionally and add a little warm water if needed.

Once the water starts boiling, add 1 bouillon cube to create a rich broth. You can also use 500ml of store-bought broth.

Next, add the radish cut into large pieces. Adding radish like you would for beef radish soup will make the broth refreshingly clear. Also, add 0.5 Tbsp of minced garlic to infuse the broth with its aroma.

Now, take out the assorted jeon you prepared. Prepare about 2-3 pieces of each type of jeon. I prepared 3 pieces of pollack jeon, 2 pieces of tofu jeon, 3 pieces of perilla leaf jeon, and 2 pieces of red pepper jeon. Since there were no skewers, I also prepared 50g of Spam, sliced into bite-sized pieces, which kids will love.

Cut the jeon into pieces that will be about half-submerged in the hot pot. I found cutting them in half to be the right size. Since a hot pot is also a visual experience, leave the center of the pot empty and arrange the cut jeon around the perimeter. If there’s too much broth initially, the jeon might float too much, so it’s best to start with a moderate amount of broth. You can always add more water or broth later if it reduces too much, so consider removing some broth if it seems excessive at first.

Slice 1/2 onion thinly and place it in the center of the pot, in the empty space you created. The onion’s sweetness will make the broth even richer.

It’s time to make the seasoning. First, add 0.5 Tbsp of salted shrimp to start seasoning. Salted shrimp adds a wonderful umami flavor, so it’s highly recommended. Taste the broth and if it’s too bland, add another 0.5 Tbsp to make it a total of 1 Tbsp. (I initially added 0.5 Tbsp and later added another 0.5 Tbsp, using a total of 1 Tbsp).

Add 1 Tbsp of soy sauce for soup to give the hot pot a deep flavor. Since the hot pot can be quite thick, sprinkle it in various places rather than just one spot. Add 1 Tbsp of red pepper flakes on top for a touch of spiciness. Tip! If you have 1 Cheongyang chili pepper, slicing it diagonally and simmering it together would make it wonderfully spicy and delicious. If you’re eating with children, 1 Tbsp of red pepper flakes is enough, but if you enjoy a bit of heat, definitely add the chili pepper.

Garnish the top with 1 shiitake mushroom, scored decoratively, and diagonally sliced green onions to complete the ingredient preparation.

Finally, to make the hot pot even more delicious, add thinly sliced mushrooms on top. (This step can be combined with step 8 by thinly slicing and placing the shiitake mushroom. Add more if you prefer a richer mushroom flavor.) Now that all ingredients are prepared, all that’s left is to cook and enjoy!
