  • Occasion : Nutritious food
  • Cooking : Boil / Simmer
  • Servings : 1 serving
  • Cooking Time : Within 90 minutes
  • Difficulty : Beginner

Main Ingredients

  • 1 whole young chicken (for Samgyetang)
  • 5 dried jujubes
  • 2 dried shiitake mushrooms
  • 2 fresh ginseng roots
  • 1 cup glutinous rice

For Removing Odors

  • 1 Tbsp minced garlic
  • 1/2 Tbsp ginger powder

Cooking Instructions

Step 1

First, trim away the thick fatty deposit near the tail of the chicken. Then, carefully remove about half of the yellowish fat from the skin and meat. This step is crucial for a clean, light-tasting broth that’s free from excess grease and has a more refined flavor.

Step 1

Step 2

Place the cleaned chicken into a pot. Add 5 dried jujubes, 2 dried shiitake mushrooms, and 1 ginseng root. Don’t worry if you don’t have traditional medicinal herbs; these ingredients alone will create a wonderfully delicious and aromatic Samgyetang.

Step 2

Step 3

Now, add 1 tablespoon of minced garlic and 1/2 tablespoon of ginger powder. These will help neutralize any gamey odors from the chicken. Alternatively, if you have fresh garlic, you can use about 5 whole cloves, lightly crushed, instead of minced garlic for a subtle yet effective aroma.

Step 3

Step 4

Rinse the glutinous rice thoroughly under running water. In a zip-top bag, combine the rinsed rice with an equal amount of water (1:1 ratio), seal it tightly, and then place the bag into the pot with the chicken. Once the soup begins to boil vigorously, carefully snip a small corner of the zip-top bag to allow steam to escape and prevent the bag from bursting.

Step 4

Step 5

As the soup comes to a rolling boil, skim off any foam or impurities that rise to the surface. Removing these impurities will result in a clearer broth and allow the pure flavors of the chicken and aromatics to shine through.

Step 5

Step 6

And there you have it – a delicious Samgyetang made simply, without relying on complex herbal mixtures! For an even more tender and flavorful chicken, continue simmering for an additional 30 minutes to an hour. The glutinous rice, now perfectly cooked inside the zip-top bag, can be scooped out with a ladle and served alongside the chicken. Sealing the rice in the bag helps it retain its shape and prevents it from scattering. Enjoy this nourishing Samgyetang, and don’t forget to savor the rich flavor of the chicken porridge too!
