For those who can’t start their day without soup, here’s a quick and easy recipe for a clear potato soup. The warm broth and tender potatoes will fill your stomach and warm your soul.
Essential Ingredients- 1 medium potato
- A little scallion, thinly sliced
- 1 egg
- 1 soup stock cube (or 500ml anchovy-kelp broth)
- 1 Tbsp soup soy sauce
- A pinch of minced garlic
- 500ml water
Cooking Instructions
Step 1
First, wash the potato thoroughly, peel it, and then slice it into 0.5cm thick half-moons or your preferred bite-sized pieces. Prepare the sliced scallions, egg, and soup stock cube. It’s helpful to beat the egg lightly beforehand to remove any stringy bits, ensuring it will incorporate smoothly into the soup.
Step 2
Pour 500ml of water into a pot and add the soup stock cube. (You can also use anchovy-kelp broth if you prefer. Soup stock cubes are wonderfully convenient for achieving a deep flavor quickly.) Once the water starts boiling, add the prepared potato slices and cook until the potatoes are tender. (This recipe is for one serving; feel free to cut the potatoes into cubes or slices according to your preference.)
Step 3
When the potatoes are almost cooked through, add 1 tablespoon of soup soy sauce for umami depth. Then, add just a small pinch of minced garlic. Be mindful not to add too much minced garlic to a clear potato soup, as it can make the broth cloudy and less clean-tasting.
Step 4
Once the potatoes are fully tender, reduce the heat to low. Slowly drizzle the beaten egg into the pot around the edges. Let the egg cook undisturbed until it forms soft curds. (Adding egg makes the soup creamier and adds extra nutrition, making it even more satisfying.)
Step 5
