Whip up a comforting and delicious bowl of Eomuk Tang (Korean fish cake soup) using simple, budget-friendly square fish cakes! This recipe is perfect for a quick meal, offering a savory and satisfying broth.
Ingredients- 4 sheets of square fish cakes (Eomuk)
- 1/2 cup dried anchovies (for broth)
- 1000ml water (about 5 cups)
- 1 piece of green onion (about 20cm long)
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce for soup (Guk-ganjang)
- 1 Tbsp tuna extract (or more soy sauce for soup)
- Pinch of black pepper
- Salt to taste
Cooking Instructions
Step 1
First, prepare the square fish cakes by cutting them into bite-sized pieces, about 2-3cm wide. You can cut them into triangles if you prefer.
Step 2
Wash the green onion thoroughly and slice it diagonally. You can cut it into larger pieces as the flavor will infuse into the broth.
Step 3
Mince the garlic finely. This ingredient adds a crucial depth of flavor to the soup. Pre-minced garlic from the store can also be used for convenience.
Step 4
In a pot, combine 1000ml of water (about 5 cups) and 1/2 cup of dried anchovies. Bring to a boil over medium heat to create an anchovy broth. Once boiling, simmer for about 5 minutes, then remove and discard the anchovies. You should have a clear, flavorful broth.
Step 5
Prepare the tuna extract, which will add a rich umami flavor to the soup. If you don’t have tuna extract, you can substitute with more soy sauce for soup, adjusting the amount to your taste.
Step 6
Have the soy sauce for soup ready. It’s best to add this gradually later in the cooking process rather than all at once.

Add the prepared fish cakes to the anchovy broth and bring to a simmer over medium heat. Let them cook for about 5 minutes until they become tender.
Step 8
Once the fish cakes are tender and floating, add the sliced green onion, minced garlic, 2 Tbsp soy sauce for soup, and 1 Tbsp tuna extract. Let it simmer for another minute or two. Season with a pinch of black pepper and add salt as needed to reach your desired taste. Simmer for another 1-2 minutes, and your delicious Eomuk Tang is ready to enjoy!
