This August has been incredibly hot. Now is the time to replenish our bodies, weary from the summer heat. That’s why I made this very simple, yet deeply savory and delicious potato stew chicken soup. The milky broth, mashed with potatoes, offers a different kind of deep, savory flavor compared to glutinous rice porridge. It’s also delicious to mix rice into the rich broth. ^^

Main Ingredients

  • 2 whole chickens (approx. 1kg each), cleaned
  • 2 large potatoes
  • 1 stalk of green onion
  • 2 liters of water

Seasoning

  • 1/2 Tbsp salt
  • 2 Tbsp minced garlic
  • 2 Tbsp cooking wine (mirin or rice wine)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, it’s important to thoroughly clean the chicken. Remove the tail (parson’s nose), the hard tips of the wings, excess fat around the neck, and any impurities inside the cavity. Rinse the chicken well under running water until completely clean.

Peel the potatoes completely. If you are using large potatoes, it’s helpful to cut them into 2-4 pieces so they cook evenly and blend well into the broth later.

Now, place the cleaned chicken and prepared potatoes into a large pot. Add 2 liters of cold water and 1/2 Tbsp of salt. Bring to a boil over high heat. Once the water starts boiling, reduce the heat slightly and simmer for 30 minutes to cook the chicken and potatoes.

After the initial simmering, add 2 Tbsp of minced garlic, a pinch of black pepper, and 2 Tbsp of cooking wine. Continue to boil over high heat for another 20 minutes. Finally, reduce the heat to low and let it steam gently for 10 minutes. This will allow the flavors to deepen and the broth to become richer.

To serve, ladle the chicken and the milky broth into bowls. Add the tender cooked potatoes. Finely chop the green onion and sprinkle it on top as a garnish for a more appealing presentation and fresh aroma. Mixing rice into this warm, rich broth makes for a wonderfully satisfying meal!
