Introducing a potato and apple salad recipe specially enhanced with tofu, designed to be enjoyed as a satisfying meal. The blend of potato’s smoothness, apple’s tanginess, and the savory crunch of pan-fried tofu is exceptional, and it’s wonderfully easy to make.
Main Ingredients- 400g Potatoes (approx. 2-3 medium potatoes)
- 1 Apple (firm and crisp variety recommended)
- 150g Tofu (firm for frying or regular tofu)
- Small amount of Carrot (optional, adds color and texture)
Salad Dressing- 5 Tbsp Mayonnaise
- 1 container Plain Yogurt (approx. 100-120g)
- 1 tsp Salt

Cooking Instructions
Step 1
First, prepare the ingredients. Use medium-sized apples and ensure the potatoes are peeled and weighed to 400g. Carrots are optional but add a nice touch of color and texture if used.

Cut the potatoes into bite-sized pieces. We’ll cook them until tender using a steamer or microwave. If using a microwave, place the potatoes in a bowl, cover with plastic wrap, and microwave for 6-8 minutes. Check for doneness and add 1-2 minute intervals if needed.

It’s best to mash the potatoes while they are still hot from cooking. Place the hot, cooked potatoes on a clean plastic wrap or parchment paper, and mash them thoroughly using a rolling pin, potato masher, or fork until very smooth. Ensure there are no lumps for a creamy texture.

Squeeze excess water from the tofu by hand and cut it into pieces roughly the same size as the mashed potatoes. Heat a frying pan with cooking oil and fry the tofu until golden brown and slightly crisp. This adds a delightful texture.

Wash the apple thoroughly, as we will be using it with the skin on. You can use baking soda or vinegar for effective cleaning. This way, you can also consume the nutrients in the apple skin.

Remove the core from the washed apple and dice it into pieces similar in size to the mashed potatoes, or slightly smaller according to your preference. To maintain a pleasant crunch, avoid dicing it too finely.

If using carrots, peel them thinly with a vegetable peeler or finely chop them. It’s best to add them raw for a crisp texture. Cut them into pieces similar in size to the diced apple.

Now, it’s time to bring all the ingredients together. Combine the mashed potatoes, diced apple, fried tofu, and prepared carrots in a large mixing bowl.

Let’s make the delicious salad dressing! In a separate bowl, combine the mayonnaise, plain yogurt, and salt. Stir until well blended. You can use a drinkable yogurt like Nam* Yakult Bulgari for this. Mix until smooth and creamy.

Pour the prepared dressing over the ingredients in the large bowl. Gently toss everything together to ensure the dressing evenly coats all the ingredients. Be careful not to mix too vigorously, as this could break down the ingredients.
