After buying a box of potatoes, I’ve been enjoying them fried and boiled. This morning, I decided to make a simple and easy potato and scallion soup. This recipe is perfect for a quick and satisfying meal, bringing warmth to your soul on a chilly day. The clear anchovy broth, tender potatoes, fragrant scallions, and a hint of spicy chili create a wonderful harmony of flavors.
Main Ingredients- 2 medium Potatoes
- 1/2 Scallion (Green Onion)
- 2 Korean Green Chilies (Cheongyang peppers)
- 1 liter Anchovy Broth
Seasoning- 1 Tbsp Minced Garlic
- 1 Tbsp Fish Sauce (e.g., Tuna Extract)
- Pinch of Roasted Salt (or regular salt)
- Pinch of Black Pepper

Cooking Instructions
Step 1
Prepare all the ingredients for your delicious potato and scallion soup. Wash the potatoes thoroughly to remove any dirt, and rinse the scallions and chilies under running water.
Step 2
Peel the potatoes and slice them thinly, about 0.5 cm thick, or cut them into julienne strips of the same thickness. This slicing method allows the potato flavor to infuse well into the broth and results in a tender texture when cooked.
Step 3
Pour 1 liter of the prepared anchovy broth into a large pot. Add the sliced potatoes to the broth. Bring the mixture to a boil over high heat. Let it simmer for about 7-10 minutes, or until the potatoes are tender.

While the potatoes are cooking, thinly slice the scallion diagonally and finely chop the Korean green chilies. The scallions will add a subtle sweetness as they cook, and the chilies will provide a pleasant spiciness that enhances the soup’s overall flavor.
