Ingredients- 60g unsalted butter, softened
- 100g sugar
- 1 pinch salt
- 100g grain powder (misugaru or similar)
- 200g cake flour
- 1 large egg
- 100ml cold water
Cooking Instructions
Step 1
First, place the softened room-temperature butter in a bowl and gently melt it using a double boiler. It’s crucial to melt it completely without any lumps.

Once the butter is fully melted, add the sugar and salt. Whisk well with a whisk until the sugar is partially dissolved. Then, remove from heat and let it cool slightly.

Now, sift the grain powder and cake flour into the bowl. Sifting ensures a smoother cookie texture. Mix them gently.

After adding the dry ingredients, crack in the room-temperature egg. Use a spatula to gently combine all the ingredients until they just start to come together.

As the mixture begins to clump, gradually add the cold water while mixing. The dough should be firm enough to hold its shape when pressed, not too sticky. Cutting and folding the dough with a spatula can help create a cleaner mixture.

Once the dough is formed, place it on a piece of plastic wrap or a clean surface. Shape the dough into a log. You can adjust the thickness to your desired cookie size.

Wrap the log tightly with plastic wrap and freeze for at least 1 hour, or until firm. While the dough is freezing, preheat your oven to 200°C (400°F).

When the dough is sufficiently firm, remove it from the freezer and slice it into approximately 1cm thick cookies. If the dough sticks to your knife, wetting the blade slightly can help create clean cuts.
