Ingredients- 100g Potatoes (about 1 small)
- 50g Black soybeans (Seoritae)
- 50g Onion (about 1/4 medium)
- 20g Butter
- 200ml Water
- 5g Chicken stock
- Pinch of Black pepper (to taste)
Cooking Instructions
Step 1
First, rinse 50g of black soybeans and soak them in enough water to cover. Refrigerate overnight. Soaking makes the soybeans softer, reduces cooking time, and aids digestion.
Step 2
Next, prepare the main ingredients for the soup: 100g of potatoes (about 1 small potato), 50g of onion (about 1/4 medium onion) for sweetness, and the soaked black soybeans. Once the ingredients are ready, shall we begin making the soup?

Thinly julienne the potatoes for easier cooking. Slicing them thinly will help them cook faster and blend more smoothly later on.

Similarly, thinly julienne the onion. The sautéed onions will add a lovely sweetness and smooth texture to the soup.

In a pot, combine the soaked black soybeans, the soaking water, and the julienned potatoes. Cover with a lid and cook over medium-low heat until most of the liquid has evaporated and the potatoes and soybeans are tender. Be sure to allow enough time for them to cook thoroughly.

Transfer the cooked black soybeans and potatoes to a blender. Add 100ml of cold water to help achieve a smoother consistency. This step also helps cool the ingredients slightly before blending, ensuring safety.

In a separate pan, melt 20g of butter over medium heat. Add the julienned onions and sauté slowly until they turn golden brown. Caramelizing the onions brings out their natural sweetness and deepens their flavor.

Once the onions are nicely browned, add them to the blender with the black soybeans, potatoes, and cold water mixture. Now, it’s time to blend everything into a smooth purée.

Pour the blended soup mixture into a pot. To avoid wasting any of the delicious soup stuck to the blender, add another 100ml of water to the blender, swirl it around to rinse, and pour this into the pot as well. This ensures you get all the flavor!

Add 5g of chicken stock to the pot and whisk thoroughly to ensure it dissolves completely without lumps. The chicken stock will add a savory depth to the soup.

Bring the soup to a simmer over medium heat. Once you see large bubbles starting to form around the edges, reduce the heat to low and continue to cook for about 3 minutes, stirring occasionally. Stirring prevents the soup from sticking to the bottom of the pot. Cook until it reaches your desired consistency. Finally, season with freshly ground black pepper to finish.
