Prepare it the night before and simply reheat it in the morning for a satisfying and delicious meal that’s both comforting and energizing. Enjoy a healthy start with the goodness of fresh vegetables and vibrant tomatoes!
Main Ingredients- 300g beef brisket or shank (or substitute with 4 strips of bacon)
- 1 Tbsp minced garlic
- 1/4 head cabbage
- 2 ripe tomatoes (or 10-15 cherry tomatoes)
- 1 onion
- 1/2 carrot
- 1 potato
- 1 celery stalk
- 1 stalk green onion (scallion)
- 2-3 bay leaves
- 1 tsp salt (adjust to taste)
- 1 tsp black pepper
- A pinch of fresh parsley (for garnish)
Cooking Instructions
Step 1
Today, we’ll be using a potato that’s just starting to sprout. Wash and peel the potato before setting it aside. (Feel free to omit the potato if you prefer.)
Step 2
Wash the cabbage thoroughly. (Don’t worry if it’s slightly frozen from the refrigerator; it won’t affect the cooking.)
Step 3
Cut the green onion into large, manageable pieces (about halves) so it’s easy to remove later.
Step 4
Slice the celery stalk diagonally into thin pieces for a pleasant texture.
Step 5
Cut the beef brisket or shank into bite-sized, flat pieces. If using bacon, cut it into similar-sized pieces.
Step 6
In a large pot or pan, heat a little oil over medium-low heat. Sauté the minced garlic until fragrant. Once the garlic aroma is released, add the beef and cook until lightly browned on all sides.
Step 7
Once the beef is partially cooked, add the chopped onion and sauté until it becomes translucent. When the onion releases its sweetness, add all the other prepared vegetables (cabbage, carrot, potato, etc.) and stir-fry for another minute or two.
Step 8
If you’re using bacon or sausage instead of beef, add them at this stage and cook along with the vegetables to enhance the flavor.
Step 9
For an extra layer of flavor, consider using chicken stock or vegetable broth instead of water. Commercial chicken stock cubes or liquid also work wonderfully.

Now, add the black pepper, chopped tomatoes, diagonally sliced celery, bay leaves, and the prepared green onion. Celery and green onion are crucial for developing the soup’s deep flavor, so be sure to include them!

Pour in enough water or broth to cover all the ingredients generously. Bring to a boil, then reduce the heat to simmer. If you don’t have fresh tomatoes, a bit of tomato puree or ketchup can be a good substitute. I used both fresh tomatoes and tomato puree.
Step 12
Simmer on medium heat for about 20 minutes, or until the vegetables are tender. During this time, remove the large pieces of green onion so they don’t overcook and become mushy.
Step 13
Adding both tomato puree and fresh tomatoes has given the Cabbage Tomato Soup a wonderfully rich depth of flavor. Taste and adjust the seasoning with salt as needed.
Step 14
For an even more intensely flavored soup, if you have an oven-safe pot, you can transfer it to the oven and bake for about an hour. However, this might be too time-consuming for a busy morning, so it’s perfectly fine to skip. Garnish with a sprinkle of fresh parsley before serving for a beautiful finish.
