Main Ingredients

  • Canned Saury: 1 can
  • Green Chilies: 2 (or to taste)
  • Onion: 1 medium
  • Scallions: 1 stalk
  • Water: 1.8L (approx. 9 cups)

Seasoning Ingredients
  • Minced Garlic: 2 tsp (or 1 Tbsp)
  • Fish Sauce: 3 Tbsp (or anchovy sauce)
  • Soy Sauce for Soup: 2 Tbsp
  • Doenjang (Soybean Paste): 1 Tbsp
  • Sugar: 1 Tbsp
  • Gochugaru (Red Pepper Flakes): 1 Tbsp

Optional Ingredients (For Enhanced Flavor)
  • Spam: 1/2 can (cut into bite-sized pieces)
  • Zucchini: 1/2 (sliced into half-moons)
  • Potato: 1 medium (diced)

Cooking Instructions

Step 1

First, prepare the alpaca kimchi by cutting it into bite-sized pieces, about 3-4 cm long. If your kimchi is too sour, you can rinse it lightly with water before using.

Step 2

Prepare the additional ingredients for the stew. Peel the potato and dice it into 1.5 cm cubes. Slice the onion into similar-sized pieces. Cut the zucchini into half-moon shapes and the scallions into diagonal slices. Finely chop the green chilies for a spicy kick.

Step 3

If you are using Spam, cut it into bite-sized pieces. This way, it will be evenly distributed in the stew later.

Step 4

Place all the prepared alpaca kimchi into a pot. Add 1.8L of fresh water. Including the liquid from the canned saury will enhance the umami flavor. Add all the seasoning ingredients: 3 Tbsp fish sauce, 1 Tbsp doenjang, 2 Tbsp soy sauce for soup, and 1 Tbsp sugar. Mix well.

Step 5

Bring the stew to a boil over high heat. Once boiling, carefully add the canned saury along with its liquid. It’s best to add the saury gently to prevent it from breaking apart.

Step 6

After the stew starts boiling, let it simmer for about 5 more minutes. Then, add the diced potatoes, sliced onions, chopped scallions, and chilies. Also add 1 Tbsp gochugaru, 2 tsp minced garlic, and the prepared Spam. Boil vigorously over high heat for 5 minutes, then reduce the heat to medium and simmer until the ingredients are cooked through. This allows the flavors to meld beautifully into the broth.

Step 7

Continue simmering over medium heat for about 15 more minutes. Finally, add the sliced zucchini. Cook for another 5 minutes, or until the zucchini is tender, and your delicious Alpaca Kimchi and Saury Stew is ready! Taste and adjust seasoning with salt or more fish sauce if needed.
