Seaweed Soup Enriched with the Umami of Canned Tuna

- 18g dried cut seaweed
- 1 can tuna (including oil)

Cooking Instructions
Step 1
First, soak the 18g of dried cut seaweed in cold water for about 10-15 minutes until fully rehydrated. Once softened, rinse it thoroughly in clean water 2-3 times, squeeze out excess water, and cut into bite-sized pieces. Rinsing the seaweed well ensures a clean taste without any impurities.
Step 2
In a heated pot, add the prepared seaweed. Pour in the entire can of tuna, including the oil. Add 1 Tbsp of minced garlic, 1 Tbsp of tuna extract (or soy sauce for soup), and 0.5 Tbsp of roasted salt. Adjust the saltiness to your preference.
Step 3
Sauté over medium heat for about 2-3 minutes, stirring well, allowing the seaweed, tuna, and seasonings to combine. This sautéing process enhances the umami of the seaweed and deepens the flavor of the soup.
Step 4
Carefully pour 1.8 liters of fresh water into the sautéed ingredients. Gently scrape the bottom of the pot to incorporate any bits stuck there as you add the water.
Step 5
Bring the soup to a boil over high heat, then reduce to medium-low and simmer for 10-15 minutes until the seaweed is tender and the soup has a rich consistency. Once done, taste the soup and adjust seasoning with salt or soy sauce for soup if needed. Serve hot for the best flavor.
