Main Ingredients

  • 3 medium potatoes
  • 1 large leaf of cabbage
  • 1/3 medium onion
  • 1/2 stalk green onion
  • 1 Korean green chili pepper
  • 1 red chili pepper
  • 2 cans (85g each) tuna
  • 5 cloves garlic

Seasoning

  • 2 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp soy sauce
  • 2 Tbsp rice syrup (or corn syrup)
  • 1 Tbsp plum extract
  • 1 Tbsp tuna extract
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Begin by preparing all your ingredients. Wash and chop the onion, green onion, and chili peppers into bite-sized pieces.

Step 1

Step 2

Peel the potatoes, wash them thoroughly, and then slice them into flat, bite-sized pieces. Aim for slices that are not too thin, so they hold their shape during cooking and provide a pleasant texture.

Step 2

Step 3

Heat a pot over medium heat and add a little cooking oil. Quickly stir-fry the sliced potatoes until they are lightly browned. This step helps to reduce moisture in the potatoes, making the stew more flavorful. Once the potatoes are slightly cooked, add 1 cup of water.

Step 3

Step 4

Add the sliced cabbage, onion, and minced garlic to the pot. Now, add the seasoning ingredients: 1 Tbsp gochujang, 3 Tbsp gochugaru, 2 Tbsp rice syrup, 3 Tbsp soy sauce, 1 Tbsp plum extract, and 1 Tbsp tuna extract. Stir everything well to combine the ingredients and seasonings evenly. Reduce the heat to medium-low and let it simmer until the liquid has reduced to a nice, saucy consistency.

Step 4

Step 5

Once the sauce has thickened, add the drained canned tuna. Gently mix it into the stew, being careful not to break up the tuna chunks too much. Tuna cooks quickly and can become dry if overcooked, so simmer for just a short time. To add extra flavor, you can add the remaining liquid from the tuna can by adding 1 Tbsp of water to the can, shaking it, and then pouring it into the pot.

Step 5

Step 6

When all ingredients are well combined and heated through, turn off the heat. Stir in the sliced red chili pepper, green onion, and Korean green chili pepper. Finish by drizzling in 1 Tbsp of sesame oil and sprinkling 1 Tbsp of toasted sesame seeds for a fragrant aroma.

Step 6

Step 7

This Tuna and Potato Stew is perfectly balanced – not too salty, with a delightful spicy and sweet flavor. It’s wonderful served over warm rice for a quick and satisfying meal. It’s an easy recipe that makes for an excellent side dish, especially on busy days.
