How to Make Delicious Gochujang Stew: An Unforgettable Spam Jjigae Recipe
This gochujang stew recipe fills a whole pot, and yet, it disappears in a single meal for two – that’s how delicious it is! I always make gochujang jjigae this way because it’s so tasty. Make sure to try it like this!
Main Ingredients- 2 Potatoes
- 1/3 Zucchini
- 1/2 Onion
- 1 Korean Green Chili Pepper (Cheongyang)
- 2 Mushrooms
- 1/2 Green Onion (Scallion)
- 1 Can of Spam
Seasoning Ingredients- 2 Tbsp Perilla Oil
- 2 Tbsp Cooking Oil
- 3 Tbsp Gochujang (Korean Chili Paste)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 500-700ml Water
- 1 Tbsp Minced Garlic
- 3 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 2 Tbsp Perilla Oil
- 2 Tbsp Cooking Oil
- 3 Tbsp Gochujang (Korean Chili Paste)
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 500-700ml Water
- 1 Tbsp Minced Garlic
- 3 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
Cooking Instructions
Step 1
First, prepare the vegetables. Cut the zucchini (1/3), potatoes (2 medium, or 4 small), onion (1/2), and Korean green chili peppers (2) into bite-sized pieces. Prepare the mushrooms and green onion as well.
Step 2
Open the can of Spam (small size). Place it in a plastic bag and mash it by pressing with your palm. This helps the Spam flavor infuse better into the stew.
Step 3
In a deep pot, heat 2 tablespoons of perilla oil and 2 tablespoons of cooking oil over low heat. Add 3 tablespoons of gochujang and gently stir to dissolve it. Be careful not to burn the gochujang while mixing it smoothly.
Step 4
Once the gochujang is somewhat dissolved, add 1 tablespoon of gochugaru and mix them together. This step will create a richer and more profound gochujang flavor.
Step 5
Now, pour in 500ml of water and stir to ensure the seasoning is well combined. (Tip: If the stew reduces too much or tastes too salty while simmering, add another 100-200ml of water to adjust the consistency. It’s best to start with 500ml.)
Step 6
Add the prepared potatoes and 1 tablespoon of minced garlic to the pot, and bring it to a boil over medium-high heat. Let it simmer until the potatoes are partially cooked.
Step 7
Once the potatoes begin to soften, add 3 tablespoons of soy sauce for soup and 1 tablespoon of fish sauce to season. Using fish sauce adds a wonderful umami depth.
Step 8
Add the mashed Spam, chopped onion (1/2), and zucchini (1/3) to the pot. Simmer until all the ingredients are well blended. Let the salty flavor of the Spam meld with the broth.
Step 9
Check if the potatoes are completely tender. Then, add the sliced Korean green chili peppers and green onion, and simmer for another moment to finish. The green chili peppers add a pleasant spiciness, and the green onion provides a fresh aroma that balances any richness.
