  • 5 Cheongyang chili peppers (optional for spiciness; omit for kids)
  • 2 Tbsp oyster sauce (approx. 30ml)
  • 2 Tbsp soy sauce (approx. 30ml)
  • 1/3 tsp black pepper (approx. 1g)
  • 2 Tbsp sesame oil (approx. 30ml)
  • A pinch of sesame seeds

Before we start making the fried rice, please note that this recipe yields a generous portion. Feel free to adjust the amounts of vegetables and sausages according to your family’s size or appetite. It’s important to balance the quantities of vegetables and sausages with the amount of rice.

For the best texture in your fried rice, finely dice all ingredients except the rice – that means the sausages and vegetables. Chopping them into approximately 5mm pieces will give you a delightful variety of textures in every bite. I’ve included 5 Cheongyang chili peppers because I enjoy a bit of heat, but if you’re making this for children or prefer milder flavors, feel free to omit or reduce the chili peppers.

Prepare your wok (or a large frying pan), which is key to making great fried rice. Add about 4 tablespoons (approx. 60ml) of cooking oil to the wok and preheat it over medium heat.

Once the wok is hot, add all the chopped vegetables and sausages. Stir-fry them over high heat. It might seem like a lot of vegetables initially, but they will wilt down significantly as they cook. Keep stirring to prevent burning.

After the vegetables and sausages have cooked down slightly, add 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, and 1/3 teaspoon of black pepper. Stir-fry everything together. Since sausages are already quite salty, be careful not to add too much soy sauce or oyster sauce, as it can make the dish too salty or greasy. Oyster sauce adds a savory depth, so use it sparingly and adjust the overall seasoning with soy sauce.

Now it’s time to add the rice. Break apart any clumps in the cold rice and add it to the wok. Over high heat, use your spatula to thoroughly mix the rice with the other ingredients, ensuring each grain is coated with oil. Breaking up the rice clumps and stirring well is crucial for achieving a fluffy texture.

Just before you turn off the heat, drizzle in 2 tablespoons of sesame oil for added aroma and sprinkle with sesame seeds. Give it a final gentle toss. The nutty fragrance of sesame oil and the slight crunch of sesame seeds will elevate the flavor of your fried rice.
