How to Make Pork and Zucchini Stew
A simple yet flavorful stew recipe using ground pork, potatoes, and zucchini. It’s quick to make and has a deep broth that will have you finishing your rice in no time. This recipe includes detailed steps, perfect for beginners.
Stew Ingredients- 1 block of firm tofu
- 5 medium potatoes
- 200g ground pork
- 1/2 zucchini
- 1 red chili pepper
- 1 green chili pepper (e.g., Cheongyang pepper)
- 1.2L water
Flavorful Seasoning Paste- 2 Tbsp tuna extract (or soy sauce for soup)
- 2 Tbsp gochugaru (Korean chili powder)
- 5 Tbsp soy sauce
- 1 Tbsp mirin (rice wine)
- 1 Tbsp ssamjang (Korean soybean paste)
- 1 Tbsp sugar
- 2 Tbsp tuna extract (or soy sauce for soup)
- 2 Tbsp gochugaru (Korean chili powder)
- 5 Tbsp soy sauce
- 1 Tbsp mirin (rice wine)
- 1 Tbsp ssamjang (Korean soybean paste)
- 1 Tbsp sugar
Cooking Instructions
Step 1
First, wash the zucchini thoroughly, trim the ends, and cut it in half lengthwise. Then, slice it into half-moon shapes about 0.5cm thick. Slicing them not too thinly will prevent them from falling apart too much while cooking.
Step 2
Wash the red and green chili peppers, remove the stems, and slice them diagonally about 0.3cm thick. The green chili peppers add a nice kick, so feel free to adjust the quantity to your preference.
Step 3
Trim the white and green parts of the scallion. Cut it in half lengthwise, then mince it into large pieces, about 0.5cm apart. Larger pieces add a satisfying texture.
Step 4
Peel the potatoes, wash them, and cut them into bite-sized cubes, about 2-2.5cm. Cut the tofu into similar-sized cubes, about 2-2.5cm. Cutting them too small might cause them to break apart during cooking.
Step 5
Now, let’s make the seasoning paste that will give the stew its deep flavor. In a bowl, combine the tuna extract, gochugaru, soy sauce, mirin, ssamjang, and sugar. Mix them well with a spoon until everything is evenly blended. Ensuring the paste is smooth is key.

Heat a pot over high heat without adding any oil. Add the ground pork and stir-fry until the outside turns brown. This process helps remove any porky smell and enhances its savory flavor.
Step 7
Once the pork is browned, add the cubed potatoes and stir-fry them together with the pork. The potatoes will absorb the pork fat, adding richness, and this step also helps them cook faster.

After stir-frying the pork and potatoes for a bit, season with two pinches of salt and two pinches of black pepper. Pre-seasoning at this stage will deepen the stew’s overall flavor.

Pour in 1.2L of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 5 minutes to partially cook the potatoes.
Step 10
After simmering for about 5 minutes and the potatoes are slightly tender, add the prepared tofu, zucchini, red chili pepper, and green chili pepper to the pot. Add the seasoning paste as well, stir everything together, and bring it back to a boil.

As the stew comes to a boil, skim off any foam or impurities that rise to the surface with a spoon. This will make the broth clearer and cleaner. Once the zucchini is tender, turn off the heat, and your delicious stew is ready to be served!
