Sandwich Ingredients- 7 Morning Buns
- 3 Eggs
- 3 Tbsp Canned Corn Kernels
- 1/4 Onion
- 1/2 Cucumber
- A little Strawberry Jam
- 0.5 Tbsp Salt

Cooking Instructions
Step 1
First, let’s prepare the ingredients for the sandwich. The cucumber and corn kernels are optional, but they add a wonderful crunch and flavor when included. We’ll be using a total of 7 morning buns for this recipe.
Step 2
We’ll be hard-boiling the eggs. Fill a pot with plenty of water and add 0.5 Tbsp of salt and 1 Tbsp of vinegar. Adding vinegar and salt helps the eggshells peel more easily. It’s also a good tip to take the eggs out of the refrigerator about 30 minutes beforehand to let them come to room temperature; this can help prevent the shells from cracking due to temperature shock. Once the water comes to a rolling boil, start the timer and boil the eggs for about 11-12 minutes until they are fully cooked.
Step 3
To prevent the sandwich filling from becoming too watery, we’ll remove the seeds from the cucumber and then finely dice it. This step ensures your sandwich won’t get soggy.
Step 4
Once the eggs are perfectly hard-boiled, immediately place them in cold water to cool down. This makes peeling the shells much easier. After peeling, separate the egg whites and yolks. Finely chop the egg whites. For the yolks, place them in a small zip-top bag and mash them thoroughly. (Alternatively, you can place the whole egg in the bag and mash it.)
Step 5
In a large bowl, combine the chopped egg whites, mashed yolks, diced cucumber, and corn kernels. Add 5 Tbsp of mayonnaise, 1 Tbsp of sweetened condensed milk, and a pinch of black pepper. Mix everything together well. The sweetened condensed milk adds a subtle sweetness that enhances the overall flavor of the egg mayo filling.
Step 6
Carefully slice the morning buns horizontally, creating a pocket. Spread a thin layer of strawberry jam inside the bun for an added touch of sweetness and a delightful contrast. Generously spoon the prepared egg mayo filling into the bun. Finally, sprinkle a little parsley flakes on top for a beautiful and aromatic finish.
