Gourmet Egg Nests Made with Mini Kabocha Squash

Ingredients- 1 Mini Kabocha Squash
- A little bit of onion (about 1/4 cup, finely chopped)
- Shredded Mozzarella Cheese (to taste, generous amount)
- 1 large Egg
- 1 pinch of Salt
Cooking Instructions
Step 1
Since we’ll be eating the skin of the mini kabocha squash, it’s important to clean it thoroughly. Use baking soda to scrub the skin well. After washing, place the squash with the stem side up and microwave for 3 minutes. Covering it with plastic wrap while microwaving helps retain moisture for a creamier texture.
Step 2
After microwaving for 3 minutes, carefully remove the squash. Cut off the stem end to create a ‘lid’, being careful not to cut too deep, so you can use it later.
Step 3
Using a spoon, gently scoop out the seeds and the flesh from the center of the kabocha squash. Be careful not to damage the squash’s structure. The scooped-out flesh can be saved for other recipes.
Step 4
Finely mince the onion. To reduce its pungency, soak the minced onion in cold water for about 5 minutes, then squeeze out any excess water. Add the drained minced onion into the hollowed-out kabocha squash. Sprinkle a pinch of salt to season.
Step 5
Carefully crack one large egg into the center of the squash, nestled amongst the onion. Because the mini kabocha is small, the egg white might overflow slightly. This is normal, don’t worry! You can gently dab away any excess white with a paper towel if desired. Gently prick the egg yolk with a fork. This prevents the yolk from exploding when microwaved.
Step 6
Generously top the kabocha with shredded mozzarella cheese. The cheese will melt beautifully, binding the ingredients together. Place the cheese-topped squash back into the microwave and cook for another 3 minutes. Continue cooking until the cheese is melted and bubbly, and the egg is cooked through.
