Main Ingredients- 6 medium potatoes
- 6 large eggs
- Generous amount of mayonnaise (adjust to taste)
- 1 bag of sandwich bread (10-12 slices)
- A little strawberry jam or your favorite jam
- 1/4 head of cabbage
Cooking Instructions
Step 1
First, wash the potatoes thoroughly and peel them. Place them in a steamer basket and steam for about 20-25 minutes until very tender. They are ready when a fork easily pierces through them. Mash the potatoes while they are still warm; this makes mashing much easier. Transfer the mashed potatoes to a mixing bowl and mash them finely using a fork or a potato masher.
Step 2
In another pot, place the eggs and cover them with cold water. Bring the water to a boil, then reduce the heat slightly and simmer for about 10-12 minutes for hard-boiled eggs. Once cooked, rinse the eggs under cold water, peel them, and either mash or finely chop them, similar to the potatoes. In the mixing bowl with the mashed potatoes, add the mashed or chopped eggs and a generous amount of mayonnaise. Mix everything together evenly to create the salad. You can add a pinch of salt and pepper to taste if desired.
Step 3
Prepare the sandwich bread by taking two slices for each sandwich. Thinly shred the cabbage for the sandwich filling. Shredding the cabbage adds a delightful crunch that enhances the sandwich’s flavor and texture.
Step 4
Spread a thin layer of strawberry jam on one side of a bread slice. The sweetness of the jam complements the savory potato and egg salad, creating a balanced flavor. If you prefer less sweetness, you can spread it very thinly on one side or omit it altogether. Feel free to use other types of jam for variation.
Step 5
On the un-jammed side of the bread slice, or on top of the jam layer, generously spoon the prepared potato egg salad. A generous filling will make the sandwich more substantial and delicious. On the other slice of bread, add the thinly shredded cabbage for an extra crunchy texture. You can also add ham or cheese at this stage if you like.
