Easy Egg Mayo Sandwich Recipe for Breakfast or Kids’ Snacks
Today, I’ve prepared a satisfying Egg Mayo Sandwich, generously filled with creamy egg salad nestled inside freshly baked morning buns. It’s perfect as a delightful brunch option and an excellent, nutritious snack for growing children. The preparation is incredibly simple, so why not give it a try today!
Egg Mayo Sandwich Filling Ingredients- 5 Eggs
- 2.5 Tbsp Mayonnaise
- 1 Tbsp Whole Grain Mustard
- 1 tsp Sugar
- 1 Pinch Salt
- 1 Pinch Pepper
Cooking Instructions
Step 1
First, let’s boil the eggs for the sandwich filling. For a perfect texture that’s great for snacks or breakfast, it’s best to hard-boil them so the yolks are crumbly. Place 5 eggs in a pot, cover with water, and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 12-15 minutes. (In my kitchen, 15 minutes resulted in a nearly hard-boiled state. Adjust the time slightly based on your cooking setup.)
Step 2
Once the eggs are boiled, immediately transfer them to cold water to cool down completely. This helps the eggshells peel off more easily, saving you time. If you often have trouble peeling boiled eggs, try adding a tablespoon of vinegar to the water while boiling. The shells will come off like magic! I skipped the vinegar today.
Step 3
After peeling all the boiled eggs, we’ll mash them using a fork, a common kitchen utensil. For our egg mayo sandwich, rather than mashing the eggs into a completely smooth paste, it’s nice to leave some small chunks for texture. Mash them until they are coarsely broken down.
Step 4
The boiled eggs are soft enough that they mash easily with a fork, creating a nice, chunky texture. Our egg salad base is now ready!
Step 5
Now it’s time to season the mashed eggs. Add 1 pinch of salt, 1/2 teaspoon of sugar, and a pinch of pepper to your liking. (The amount of pepper isn’t critical, so feel free to add as much or as little as you prefer.) Finally, generously add 2.5 tablespoons of mayonnaise for creaminess.
Step 6
Add 1 tablespoon of whole grain mustard for an extra layer of flavor. Stir everything together with a spoon or spatula until well combined. If the mixture seems too thick, you can add a little more mayonnaise.
Step 7
And here we have our delicious-looking egg mayo salad! Can’t you just imagine the delightful combination of creamy eggs, tangy mayonnaise, and the pop of whole grain mustard?
Step 8
Next, let’s prepare the bread for our sandwiches. If you’re using soft morning buns, slice off the top part horizontally with a knife. (If you don’t have morning buns, you can also use sliced bread after trimming the crusts.) Generously fill the hollowed-out bread with the prepared egg mayo salad. Don’t be shy – stuff it until it’s overflowing for the best taste!
Step 9
Ta-da! Your hearty and appetizing Egg Mayo Sandwich is complete! This recipe is virtually foolproof and incredibly easy to make. It provides a satisfying meal that can be enjoyed on its own, and it also makes a fantastic, healthy snack for hungry kids during school breaks. Enjoy your delicious creation!
