Craving cream risotto but worried about calories? I made this version using oatmeal to keep it lighter! Topping it with crispy fried tonkatsu makes it an absolutely wonderful meal. Honestly, compared to traditional risotto, the taste is slightly different due to the oatmeal, but I still found it delicious. It was exciting to discover that oatmeal could be used this way!   • 1/2 cup rolled oats
  • 100g milk
  • 20g minced beef
  • 2 Korean chili peppers (Cheongyang peppers)
  • 1 shiitake mushroom
  • 4 pieces tonkatsu (pork cutlet)

First, lightly grease a pan with oil and add the minced beef. Stir-fry over medium heat until the beef is cooked and releases its delicious aroma. For extra flavor, you can add a little minced garlic.

Once the beef is nicely browned, pour in the 100g of milk and mix well. Stir continuously to prevent the milk from sticking to the bottom of the pan, creating a smooth sauce base.

Now it’s time for the star ingredient: the oatmeal. Add 1/2 cup of rolled oats and mix them thoroughly with the milk sauce. Reduce the heat to low and let it simmer gently. Stir occasionally as the oats absorb the milk and the mixture thickens, which should take about 5-7 minutes.

As the risotto nears completion, add the thinly sliced shiitake mushroom and the finely chopped Korean chili peppers. The chewy texture of the mushrooms and the mild spiciness of the chili peppers will add depth and complexity to the risotto.
