Chicken Noodle Soup Ingredients- Chicken breast tenders 500g
- Kalguksu noodles (fresh) for 2 servings
- Water 1L
- Chicken stock 2 Tbsp
- Minced garlic 1/2 Tbsp
- Yeondu (Korean soup soy sauce) or soy sauce 1 Tbsp
- 1 stalk Green onion
Cooking Instructions
Step 1
First, prepare 500g of chicken breast tenders, the star of our Dak-kalguksu. Chicken tenders are tender and fibrous, offering a savory taste with every bite. Rinse them lightly under running water.
Step 2
In a pot, add enough water to cover the chicken tenders and bring to a boil. Blanch the chicken tenders in boiling water for about 5 minutes. This step helps to remove impurities and results in a cleaner broth.
Step 3
After blanching, rinse the chicken tenders under cold water to remove any residue. Then, shred the chicken by hand into bite-sized pieces, following the grain of the meat. Avoid shredding too finely to maintain a pleasant chewiness.
Step 4
Now, let’s start making the broth. Pour 1L of fresh water into the pot. (1L of water is approximately the amount for 2 servings of instant ramen, so prepare a generous amount.)

Add 2 tablespoons of chicken stock to enhance the broth’s savory depth. If you don’t have chicken stock, you can use chicken broth or kelp broth. Using commercial chicken stock makes achieving a deep flavor much easier.

Add 1/2 tablespoon of minced garlic, which pairs wonderfully with chicken. The pungent aroma of garlic helps to eliminate any unwanted chicken smell and adds to the overall flavor. Don’t hesitate to add a bit more if you like!
