Main Ingredients

  • 3 frozen croaker fish
  • 2 medium potatoes
  • 1/2 onion
  • 1/2 stalk of green onion (scallion)
  • 1 red chili pepper
  • 1 green chili pepper
  • 2 cups beer (for thawing and removing fishiness)
  • 1 Tbsp rice wine or cooking wine (can substitute for ginger wine)

Savory and Sweet Braising Sauce

  • 2 Tbsp soy sauce
  • 2 Tbsp plum syrup (adjust sweetness)
  • 1 Tbsp anchovy sauce (for umami)
  • 2 Tbsp mirin or cooking wine
  • 1 Tbsp perilla oil (for nutty flavor)
  • 1 Tbsp minced garlic
  • 1/2 Tbsp red pepper flakes (for color and mild heat)
  • A pinch of black pepper
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp finely chopped onion

Thaw the frozen croaker fish by soaking them in 2 cups of beer for about 10 minutes. The beer helps remove any fishy odor and tenderizes the flesh. Once thawed, scrape off the scales with the back of a knife and rinse thoroughly under running water.

Peel the potatoes and cut them into large chunks, about 1.5 to 2 cm thick. Slice the onion thickly. Slice the green onion, red chili, and green chili peppers diagonally for color.

In a wide, deep pan, add the sliced potatoes and 1 cup of water. Bring to a simmer over medium heat. Cook until the potatoes become translucent and slightly tender (about 5-7 minutes).

When the potatoes are halfway cooked, arrange the cleaned croaker fish evenly in the pan. Drizzle 1 Tbsp of rice wine (or cooking wine) over the fish to further eliminate any fishy smell. In a separate bowl, mix all the braising sauce ingredients. Pour the prepared sauce over the fish and potatoes in the pan. Add the sliced vegetables (onion, chili peppers, green onion) at this time. Add another cup of water, cover with a lid, and simmer over medium-low heat for about 10 minutes.
