Easy Beef and Radish Soup Recipe the Kids Will Love!
Life has been so hectic lately, I haven’t had much time for cooking posts! My blog traffic has been a bit down because of it. So, during this recent holiday, I decided to buckle down and prepare several side dishes and meals. This post is all about my Beef and Radish Soup recipe. Actually, I initially made this as a soup for my child, but I ended up making another pot for my husband on the weekend because we had time! I’ll share how to make a radish soup that even kids enjoy. I kept the seasoning mild for my child, but I’ll also explain how to make it for adults. This comforting and flavorful soup is perfect for any meal!
Ingredients- Beef (for soup or stir-fry), about 1 handful (approx. 100-150g)
- Daikon Radish, about 2 handfuls (approx. 300-400g)
- Minced Garlic, a pinch
- Sesame Oil, 1/2 Tbsp
- Soup Soy Sauce (Guk-ganjang), 1 Tbsp (2 Tbsp for adult version)
- Salt (to taste)
- Green Onion, a small amount
Cooking Instructions
Step 1
First, let’s prepare the ingredients that will form the base of our delicious soup. If you don’t have beef specifically cut for soup, you can use thinly sliced sirloin or ribeye, cut into bite-sized pieces for a tender texture. Peel the daikon radish and slice it thinly (about 0.5cm thick) or cut it into cubes for easier eating, especially for children.
Step 2
Heat about 1/2 Tbsp of sesame oil in a pot over medium-low heat. Add the prepared beef and stir-fry until it’s about half-cooked and has a nice, savory aroma. Sautéing the beef beforehand significantly deepens the flavor of the soup.
Step 3
Once the beef is about halfway cooked, add the sliced daikon radish to the pot and stir-fry together with the beef. When the radish starts to turn slightly translucent, pour in plenty of water. Add enough water so that the ingredients are submerged with extra room, as we’ll be simmering this for a while. The amount of water can be adjusted based on your preference for soup volume.
Step 4
Now, add the minced garlic and soup soy sauce to enhance the flavor. For the child’s portion, use just a tiny bit of minced garlic and 1 Tbsp of soup soy sauce. If you’re making this for adults as well, you can increase the minced garlic to about 1/2 Tbsp and the soup soy sauce to 2 Tbsp. You’ll adjust the final seasoning with salt later.
Step 5
Bring the soup to a boil, then reduce the heat to medium-low, cover, and simmer until the daikon radish is completely tender and soft. Once the radish is cooked through and tender, add the finely chopped green onions and simmer for another minute or two. Taste the soup and adjust the seasoning with salt if needed. If it’s too salty, you can add a little more water. (Tip: If you have firm tofu, dicing about half a block and adding it to the soup will make it even more hearty and delicious.)
