Cooking Instructions
Step 1
First, rinse the rice thoroughly and let it drain. Lightly wipe the dried kelp with a damp cloth. Place the rinsed rice and kelp in your rice cooker or pot. Add 2 cups of water (for cooking the rice) and let it soak for about 30 minutes. Soaking the rice helps it cook evenly and achieve a fluffy texture.
Step 2
In a bowl, combine the minced beef with 1 Tbsp soy sauce, 1 Tbsp cooking wine, 1 tsp sesame oil, and a pinch of pepper. Mix well to marinate. This step helps remove any gamey odors from the beef and enhances its flavor. Let it marinate for about 10 minutes.
Step 3
Now, we’ll cook the rice with the soaked rice and kelp. If using a rice cooker, simply start the cooking cycle. If using a pot on the stovetop, bring it to a boil over high heat, then reduce to medium-low heat for about 10-12 minutes. Once cooked, turn off the heat and let it steam for 5 more minutes with the lid on.
Step 4
Once the rice begins to boil (or after it’s started cooking in the rice cooker), add the rinsed and drained bean sprouts evenly over the rice. Then, carefully layer the marinated minced beef on top of the bean sprouts. Try not to press down on the sprouts. Cover the pot or rice cooker and let it cook. While the rice is cooking, it’s the perfect time to prepare the delicious dipping sauce!
Step 5
In a small bowl, combine all the sauce ingredients: 5 Tbsp soy sauce, 1 Tbsp chopped scallions, 1 Tbsp minced garlic, 1 tsp sugar, 1 Tbsp sesame oil, and 1 tsp toasted sesame seeds. Stir everything together until well combined. For a spicier kick, you can add a bit of chili flakes or finely chopped green chili peppers. Preparing the sauce in advance allows the flavors to meld together beautifully.
Step 6
When the rice is done, open the lid to reveal the fragrant aroma of bean sprouts and savory beef! Gently mix the rice, bean sprouts, and beef together with a spatula. Serve the mixture into bowls. Drizzle generously with the prepared dipping sauce and mix well before eating. This dish is so satisfying, you won’t need many side dishes!
