Main Ingredients

  • Soft Tofu (Sundubu) 1 pack (approx. 350g)
  • Green Onion 1/4 stalk
  • Onion 1/2 medium
  • Shiitake Mushrooms 2 large

Broth & Seasoning

  • Water 500ml (approx. 2.5 cups)
  • Korean Soup Soy Sauce (Gukganjang) 1 Tbsp
  • Fish Sauce (Anchovy) 1 Tbsp
  • Salted Shrimp (Saeujeot) 1/3 Tbsp (or salt to taste)
  • Minced Garlic 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Chop the green onion into bite-sized pieces. This makes it visually appealing and easy to eat.

Step 1

Step 2

Peel the onion and slice it into strips about 0.5 cm thick. The natural sweetness of the onion will enrich the broth’s flavor.

Step 2

Step 3

Trim the tough stems from the shiitake mushrooms. Then, slice them thinly along the natural grain of the cap. They will add a wonderful aromatic depth to the stew.

Step 3

Step 4

Carefully open the package of soft tofu and divide it into 2-3 large pieces. We’ll add it to the stew in these chunks, so no need to cut it further. You can add it directly without draining.

Step 4

Step 5

Now, let’s start cooking the stew. In a pot, combine the water (500ml), Korean soup soy sauce (1 Tbsp), fish sauce (1 Tbsp), and salted shrimp (1/3 Tbsp). Add the sliced shiitake mushrooms as well. If you don’t have salted shrimp, you can use regular soy sauce or salt to adjust the seasoning. Bring this mixture to a rolling boil over high heat.

Step 5

Step 6

Once the broth is boiling vigorously, reduce the heat to medium. Add the minced garlic (1 Tbsp) and stir well. Let it simmer for a moment to allow the garlic aroma to infuse the broth.

Step 6

Step 7

Add the sliced onions to the pot. Now, add the star ingredient for this nutty flavor: 5 tablespoons of perilla seed powder! You can adjust the amount of perilla seed powder to your liking; feel free to add more if you desire an even richer, nuttier taste.

Step 7

Step 8

Finally, gently add the large chunks of soft tofu and the chopped green onions. Let the stew simmer for another few minutes until everything is heated through. Stir gently to avoid breaking the tofu. Taste the stew and add a pinch of salt if needed to achieve your desired seasoning.

Step 8

Step 9

Your delicious and comforting Deulkkae Sundubu Jjigae is ready to be enjoyed! Serve hot, perhaps over a bowl of rice, and savor every spoonful. ^^~
