For the Broth- Dried shiitake mushrooms, 1/2 handful
- Dried anchovies, 1 handful
- Dried green onions, 1/2 handful
- Dried chili seeds, 1 teaspoon
- Dried kelp (small size), 4 pieces
- Store-bought or homemade broth sachet, 1 piece
Cooking Instructions
Step 1
First, let’s prepare the flavorful broth. Place dried shiitake mushrooms, dried anchovies, dried green onions, dried chili seeds, and dried kelp into a broth sachet. You can also use a convenient store-bought broth sachet.
Step 2
In a pot, add 1 liter of clean water and the prepared broth sachet. Bring to a rolling boil over high heat and simmer for 10 minutes to extract a deep, savory broth. While the broth is simmering, we’ll prepare the other ingredients.
Step 3
Thoroughly peel the fresh radish after cutting it in half. The upper part of the radish tends to be sweeter, so keep that in mind! Julienne the radish into slightly thicker strips than you would for seasoned radishes. Slicing them to about 0.5 cm thickness will give a nice texture.
Step 4
Now for the sautéing step. Heat 1 teaspoon of perilla oil in the pot and add the julienned radish. Sprinkle in 1-2 pinches of salt and stir-fry over medium-low heat for about 5 minutes, or until the radish becomes translucent. Sautéing the radish like this enhances its natural sweetness and helps create a clearer broth.
Step 5
Once the radish is softened from sautéing, pour in the prepared broth. Season the soup with soy sauce for soup according to your preference; seasoning with soy sauce first will give the soup a lovely color. Cover the pot and simmer for another 5 minutes to allow the flavors to meld into the radish.
Step 6
Here comes the key to creaminess: the ground perilla seeds. Ladle about 3-4 tablespoons of the simmering radish soup into a separate bowl. Add the ground perilla seeds to this ladleful of soup and whisk until smooth and lump-free. Gently pour the dissolved perilla seed mixture back into the pot of radish soup and stir well to combine.
Step 7
After adding the perilla seeds, continue to simmer for another 2-3 minutes. Your delicious Perilla Seed and Radish Soup, wonderfully smooth, nutty, and naturally sweet, will be ready! Serve warm for a comforting and healthy meal the whole family can enjoy.
