- 1 bowl of leftover rice
- 2 cups of well-fermented kimchi (chopped finely, using a standard Korean paper cup)
- 1 can of tuna (drained of oil)
- 2 eggs
- 1 Tbsp red pepper flakes (gochugaru)
- 0.5 – 1 Tbsp sugar (adjust according to kimchi’s sourness)
- 500ml anchovy-kelp broth or water
Cooking Instructions
Step 1
First, prepare 500ml of anchovy-kelp broth. If you don’t have broth, you can substitute it with 500ml of plain water. This broth will add a deep flavor to your porridge.
Step 2
Heat a pan over medium-high heat. Add the finely chopped kimchi (2 cups) and the drained tuna (1 can). Stir-fry them together.
Step 3
Next, add 1 Tbsp of red pepper flakes for a spicy kick and a vibrant color. To balance the sourness of the kimchi, add 0.5 to 1 Tbsp of sugar. It’s best to adjust the sugar based on how sour your kimchi is. Stir-fry everything until well combined and fragrant, developing the flavors.
Step 4
Once the kimchi and tuna are nicely sautéed, pour in the prepared 500ml of anchovy-kelp broth (or water) and bring it to a boil over high heat.
Step 5
When the broth begins to boil, reduce the heat to medium-low. Add 1 bowl of leftover rice to the pot. Make sure to break up any clumps of rice as you add it.
Step 6
Let the porridge simmer gently for about 7-8 minutes, or until the rice grains have softened and broken down, creating a creamy consistency. Stir occasionally to prevent the porridge from sticking to the bottom of the pot.
Step 7
When the rice is tender and the porridge has reached your desired thickness, lightly beat 2 eggs in a separate bowl. Reduce the heat to low. Slowly drizzle the beaten eggs into the simmering porridge in a swirling motion, while gently stirring with chopsticks or a spoon.
