  • 1/3 stalk green onion, finely chopped
  • 1/2 onion, thickly sliced
  • 1L water

  • 3 Tbsp soybean paste (doenjang)
  • 1 Tbsp red pepper paste (gochujang)
  • 1 Tbsp minced garlic

First, carefully remove the heads and innards from the medium anchovies. This step is crucial for a cleaner, less bitter broth.

Peel the radish and potatoes, then slice them thinly, about 0.5cm thick. Slice the onion thickly, and chop the napa cabbage into bite-sized pieces (about 3-4cm). Diagonally slice the chili peppers and finely chop the green onion. Having all your vegetables prepped makes the cooking process smoother.

In a pot, combine the prepared anchovies and 1 liter of water. Dissolve the 3 Tbsp of soybean paste and 1 Tbsp of red pepper paste into the water using a spoon until smooth. This creates your flavorful broth base. Dissolving the pastes beforehand prevents clumps in the soup.

Once the broth begins to boil, add the sliced potatoes and radish. Bring it to a boil over high heat. The potatoes and radish will soften and release their natural sweetness into the soup.
