First, prepare the broth for a flavorful soup. Fill about two-thirds of a pot with water. If you don’t have specific broth anchovies, use about 10 medium-sized anchovies. Once the water boils, add 1 sheet of dried kelp. Reduce the heat to medium and simmer for another 5 minutes. When a rich aroma from the anchovies and kelp is released, turn off the heat and cover the pot to let it steep.

Peel the potatoes, cut them into quarters, and then slice them thinly. Soaking the sliced potatoes in cold water for a bit will help remove excess starch, making the soup clearer.

Peel the onion, cut it into quarters, and then slice it thinly into strips. Sliced onions will add sweetness and a refreshing taste to the soup.

Prepare the tofu by cutting the 1/2 block into bite-sized pieces. If you cut them too small, they might break apart while cooking, so aim for a moderate size.

Once the ingredients are ready, strain the broth to remove the anchovies and kelp. Add the sliced onion and potatoes to the clear anchovy broth and bring to a simmer over medium heat. When the potatoes are about two-thirds cooked, add the tofu and continue to cook over low heat. Make sure to cook until the potatoes are tender.

When all the ingredients are tender, season the soup with soy sauce for soup (Guk-ganjang). Add a pinch of salt and pepper for extra flavor. Finally, add a generous amount of minced green onion and turn off the heat. (You can adjust the amount of green onion to your liking; I added about 3 tablespoons because I love them!)
