Main Ingredients

  • 200g beef (for soup), cut into bite-sized pieces
  • 8 dumplings (mandu)
  • 2 handfuls rice cake slices (tteok, approx. 2 servings)
  • 1kg beef bone broth (seolleongtang, store-bought or homemade)

Seasoning & Garnish

  • 1/2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • A pinch of black pepper
  • Egg garnish (optional)
  • Salt (to taste, if needed)

Cooking Instructions

Step 1

First, soak the rice cake slices in cold water for about 20 minutes until they become soft and pliable. Drain the soaked rice cakes well. In a pot, heat 1 Tbsp of sesame oil over medium heat and stir-fry the beef pieces until they are no longer pink on the outside.

Once the beef is partially cooked, add 1/2 Tbsp of soy sauce and continue to stir-fry, seasoning the meat. This adds depth of flavor. Once the beef is cooked to your liking, set it aside on a separate plate.

Now, let’s prepare the soup base. Pour 1kg of beef bone broth (or anchovy-kelp broth) into a pot and bring it to a boil over high heat. Once the broth is boiling, add the drained rice cake slices and 8 dumplings. Cook until the rice cakes are tender and the dumplings float to the surface.

Taste the soup and adjust the seasoning if necessary. The soy sauce-marinated beef and the rich beef bone broth itself provide a delicious base flavor, so additional seasoning might not be needed. Sprinkle a pinch of black pepper for added aroma. You can add salt to your preference when serving.
