Main Ingredients

  • 100g dried pollack (lightly rinsed)
  • 150g Korean radish (julienned thinly)
  • 150g soybean sprouts (rinsed thoroughly)
  • 1 stalk green onion (sliced diagonally)
  • 1 chili pepper (sliced diagonally, seeds removed)
  • 1 red chili pepper (sliced diagonally, seeds removed)

Seasoning & Broth

  • 1 Tbsp soup soy sauce
  • 1 Tbsp tuna extract (or substitute with more soup soy sauce if unavailable)
  • 0.7 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • Plenty of broth (anchovy-kelp broth or rice water)

Cooking Instructions

Briefly rinse the dried pollack under cold water to remove any impurities. Then, cut it into bite-sized pieces (about 3-4cm). Be careful not to rinse for too long, as this can diminish the flavor.

Peel the Korean radish and julienne it into thin strips, about 0.3cm thick. Slicing it thinly allows the flavors to infuse better into the broth and cooks faster.

Heat 1 tablespoon of sesame oil in a pot over medium-low heat. Add the prepared dried pollack and stir-fry for 2-3 minutes until fragrant. This step removes any fishy smell and enhances the nutty aroma.

Once the pollack is lightly fried, add the julienned radish to the pot and stir-fry together for another 2-3 minutes, until the radish becomes slightly translucent. This blending of flavors creates a deeper, more complex broth.
