On a chilly day, this Eomuk Tang (Korean fish cake soup) with skewers is a perfect treat. It’s a comforting soup that will warm you from the inside out.
Main Ingredients- 10 sheets of square fish cakes (Eomuk)
- 1/4 Korean radish (Mu)
- 2 stalks of green onion (Daepa)
- 1 handful of dried kelp or seaweed (Dasima or Miyeok)
- 1 onion
- A pinch of black pepper
- 2 Tbsp soy sauce (Guk-ganjang)
- 1 tsp minced garlic
- 600ml water
- 5 wooden skewers

With the weather being cold for two consecutive days, children often come home saying ‘It’s cold!’. On such days, Eomuk Tang with skewers is a wonderful after-school snack for kids, and it’s especially delicious when you’re craving a warm, comforting soup on a cold winter day. Let’s make this delightful dish together. Shall we begin?

First, in a pot, combine 600ml of water with roughly chopped Korean radish, onion, the white parts of green onions, dried kelp (or seaweed), and 1 tsp of minced garlic. Bring this to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 15-20 minutes to create a deep and refreshing broth. After the broth has sufficiently infused, remove the radish and onion (these vegetables are used for flavor, but can become mushy if overcooked). Cut the green onions and kelp (or seaweed) into appropriate sizes. If your family enjoys eating the removed vegetables, you can leave the green onions and kelp in the soup. Now, season the broth with 2 Tbsp of soy sauce and a pinch of black pepper. If it tastes bland, you can add more soy sauce to your preference.

Cut the fish cakes into bite-sized pieces. For square fish cakes, fold them in half or cut them into 2-3 segments. Thread the folded fish cakes onto the 5 wooden skewers in a zig-zag pattern. This creates a nice skewer shape and makes them easy to eat.
Step 4
Carefully place the prepared fish cake skewers into the simmering broth. Cook over medium-low heat for about 5-7 minutes, or until the fish cakes are tender and slightly plump. Be careful not to overcook them, as they can become too soft. Skim off any foam that rises to the surface during cooking for a clearer and more delicious soup.
