Introducing a magical, super simple fish cake noodle recipe that you can whip up anytime with just square fish cakes and fresh green onions, staples found in almost every refrigerator. The harmony of the deep, savory broth, chewy fish cakes, and springy somen noodles is simply exquisite!
Main Ingredients- 4 sheets of square fish cake
- 1 white part of a large green onion
- 3 Tbsp tuna extract
- 1 liter of water
- 10 twists of black pepper
- 2 servings of somen noodles (approx. 200g)
Cooking Instructions
Step 1
First, prepare the green onion. Cut the white part into two large pieces, each about 4cm long. Cutting them this large helps to infuse the broth with a refreshing depth of flavor.
Step 2
Roll up the square fish cakes tightly. Then, slice them thinly into noodle-like strips. Slicing them this way allows them to absorb the broth beautifully, making them even more delicious.
Step 3
Now, pour 1 liter of fresh water into a pot. Add the large-cut green onion pieces and bring to a boil over high heat. Once the green onion softens and releases its refreshing aroma, add the tuna extract (3 Tbsp), which is the secret to its savory depth, and bring it back to a boil. As the broth boils, add all the thinly sliced fish cakes and cook them.
Step 4
When the fish cakes have absorbed plenty of broth and become plump, finish by adding about 10 twists of black pepper for extra flavor. Once the broth is ready, turn off the heat.
Step 5
In a separate pot, bring a generous amount of water to a rolling boil. Once boiling, add the 2 servings (200g) of somen noodles. Cook them for about 2 minutes and 30 seconds, which is roughly 30 seconds less than the package instructions. After cooking, rinse the somen noodles thoroughly in cold water, rubbing them like laundry to remove excess starch – this ensures a wonderfully chewy texture. Drain them completely in a colander.
Step 6
Now, arrange the prepared somen noodles attractively in a bowl. Ladle the hot fish cake broth generously over the noodles. Briefly dipping the noodles in the hot broth (a technique called ‘to-ryeom’) will make them even softer and more delightful. If you prefer a bit of spice, feel free to sprinkle some red pepper powder on top – it’s delicious!
