The weather has turned quite chilly, hasn’t it? I hurried back home from a walk with my dog, feeling the biting winter wind on my cheeks. On such a cold day, how about a warm bowl of noodles? Let’s make some delicious ‘Fish Cake Noodles’, which are like traditional banquet noodles but with the added depth of flavor from fish cakes (oden)!

Ingredients

  • 1 serving Somyeon noodles
  • 2 sheets of fish cake (oden)
  • 1/4 radish
  • 6-7 dried anchovies for broth
  • 2 pieces of dried kelp (dashima)
  • 1/2 stalk of green onion

Cooking Instructions

To remove any fishy smell from the dried anchovies, trim their heads and innards. Then, microwave them for about 30 seconds to dry them out slightly. This step helps create a cleaner-tasting broth.

Pour about 1 liter (approximately 5 Korean paper cups) of water into a pot. Add the prepared anchovies, kelp, and radish cut into bite-sized pieces. Bring to a boil over high heat.

Once the water begins to boil vigorously, immediately remove the kelp. Be careful not to boil the kelp for too long, as it can impart a bitter taste.

After removing the kelp, continue to boil the anchovies for another 5 minutes to extract their flavor for the broth, then remove them. Next, add the fish cake, cut into bite-sized pieces, and simmer until tender.

In a separate pot, boil the somyeon noodles. Add the noodles to boiling water and cook for 3-4 minutes. Once cooked, rinse them under cold water and drain well. It’s best to serve the noodles immediately to prevent them from becoming mushy.

When the broth has a good flavor, the radish is translucent, and the fish cake is tender, season the soup with soup soy sauce and salt. Using only soup soy sauce can make the broth too dark, and using only salt might lack depth. Therefore, use soup soy sauce for color and salt to adjust the overall taste. Feel free to add a pinch of black pepper if desired.
