Main Ingredients- Beef (for soup) 200g
- Radish 400g (cut into bite-sized pieces)
- Scallion 1/2 stalk (sliced diagonally)
- Minced garlic 1 Tbsp
- Sesame oil 2 Tbsp
- Soy sauce for soup (Gukganjang) 1 Tbsp (or fish sauce)
- Salt 1/3 Tbsp (adjust to taste)
- Black pepper, a pinch
- Anchovy-Kelp Broth 1.2L (or rice water, water)
Cooking Instructions
Step 1
First, prepare the radish by cutting it into bite-sized pieces, about 2cm thick, into half-moon or square shapes. Slice the scallions diagonally, using both the white and green parts. Cut the beef into bite-sized pieces to prevent sticking to the pot, and have your minced garlic ready.
Step 2
Have your soy sauce for soup, salt, and black pepper for garnish ready. Using fish sauce instead of soy sauce can deepen the broth’s flavor and add umami. Adjust the amount according to your preference.
Step 3
Now, let’s start stir-frying. Heat a pot over medium heat and add 2 Tbsp of sesame oil. Add the prepared beef and stir-fry until the surface turns brown. Searing the beef first helps to lock in its juices and enhance its flavor.

Once the beef is partially cooked, add the generously cut radish and 1 Tbsp of minced garlic. Add 1 Tbsp of soy sauce for soup and continue to stir-fry together. After stir-frying all the ingredients, pour in 1.2L of the prepared anchovy-kelp broth.
