Tteokguk Ingredients- 200g Tteokguk rice cakes
- 150g Beef
- 1 Egg
- 1 Tbsp Soup soy sauce for tteokguk
- 1 Tbsp Soy sauce for tteokguk
- 1 tsp Minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
Soak the 200g of tteokguk rice cakes in cold water for about 10 minutes to soften them slightly. This prevents them from sticking together and ensures they cook evenly.
Step 2
In a pot for making anchovy broth, lightly toast 2 dried anchovies for broth (‘bendaengi’), 10 dried anchovies, and 2 kelp sheets in a dry pan. This step removes any fishy smell and enhances umami.
Step 3
Pour 1 liter of cold water over the toasted anchovies and kelp. Bring to a boil over high heat.
Step 4
Finely mince 150g of beef. In a bowl, combine the minced beef with 1 Tbsp soy sauce, 1 tsp sugar, 1 Tbsp minced garlic, and a pinch of black pepper. Gently mix and knead the ingredients together to season the beef.
Step 5
Add the seasoned beef to a non-oiled pan over medium heat and stir-fry. Cook until the beef is browned and fragrant, bringing out its savory flavor.

Once the broth starts boiling, remove the kelp immediately. Continue boiling the anchovies for another 5 minutes, then strain to get a clear anchovy broth. Be careful not to over-boil the kelp, as it can release a bitter taste.

Season the clear anchovy broth by adding 1 Tbsp soup soy sauce for tteokguk and 1 Tbsp regular soy sauce. The soup soy sauce adds umami, while the regular soy sauce contributes color.

Once the broth is seasoned and boiling, add 1 tsp of minced garlic. Then, add the softened tteokguk rice cakes. Stir gently to prevent the rice cakes from sticking to each other.

When the rice cakes are tender, add the stir-fried beef topping and turn off the heat. Cook the rice cakes until they are soft but not mushy.

Separate the egg white and yolk of 1 egg. Make thin omelets (jidan) from each. Cook them slowly over low heat for a tender result. Once cooled, slice the omelets into diamond shapes for garnish.
