  • Kalguksu (knife-cut noodles) for 1-2 servings
  • Minced garlic 1 Tbsp
  • Green onion 1/2 stalk (chopped)
  • Small onion 1/2 (thinly sliced)
  • Frozen dumplings 4 pcs (optional, for extra richness)
  • Soy sauce for soup 1 Tbsp
  • Fish sauce (anchovy) 1 tsp
  • Salt (to taste)
  • Pepper (a pinch)

Prepare your vegetables: thinly slice the onion and finely chop the green onion. Mince the garlic. Having all your ingredients prepped before you start cooking makes the process much smoother.

For tender chicken, chicken tenderloin is recommended over breast meat, especially if you’re cooking for children as it’s less likely to be dry. Prepare your kalguksu noodles and any optional additions like frozen dumplings.

Bring 1.2L of water to a boil in a pot over high heat. Once boiling, add the chicken tenderloin and reduce the heat to medium. Simmer for about 15-20 minutes to create a flavorful chicken broth. Don’t overcrowd the pot, as the water-to-chicken ratio helps in extracting flavor.

Remove the cooked chicken from the broth and set it aside to cool slightly. Add the sliced onion, chopped green onion, and minced garlic to the simmering broth. Continue to cook for another 10 minutes to infuse the broth with vegetable flavors.
