Pancake Ingredients
  • 1 bunch enoki mushrooms (approx. 100g)
  • 5 Korean green chili peppers (kkwarigochu)
  • 6 sticks imitation crab meat (long type)
  • 1 egg

Seasoning & Others
  • 2-3 pinches salt
  • Pinch of black pepper
  • Cooking oil (for the pan)

Cooking Instructions

Step 1

Prepare the imitation crab sticks; choose the longer ones as they will be used to form the heart shape.

Step 2

Trim the base of the enoki mushrooms, rinse them lightly under running water, pat them dry, and then finely chop them. Remove the stems from the Korean green chili peppers, shake out the seeds, and also chop them finely. Finely chop about 2-3 sticks of the imitation crab meat as well. Place all these chopped ingredients into a bowl.

Step 3

Crack 1 egg into the bowl with the chopped ingredients. Using only one egg helps prevent the batter from becoming too watery; if it seems too thin, you can add a little more chopped enoki mushroom or imitation crab meat to adjust the consistency.

Step 4

Cut each of the 6 imitation crab sticks in half lengthwise to create longer pieces. These pieces will be used to form the outline of the heart shape using skewers. Once you have formed the heart shapes with the crab sticks and skewers, add 2-3 pinches of salt and a pinch of black pepper to the batter in the bowl, mixing gently to season. The batter is now ready to fill the heart molds.

Step 5

Heat a non-stick pan over medium-low heat with a little cooking oil. Carefully place the heart-shaped imitation crab molds onto the pan. Pour the batter (egg and vegetable mixture) into the heart mold, filling it evenly. Be careful not to let the batter spill out of the mold. Cook for about 2-3 minutes over low heat, then gently flip the pancake with a spatula and cook the other side until golden brown. Cooking over low heat is key to ensuring it cooks through without burning.

Step 6

Once the pancake is fully cooked, carefully remove the skewers that formed the heart shape. Arrange the pancakes attractively on a plate. Your adorable heart-shaped enoki mushroom pancakes are ready! They are best enjoyed warm.
